- Preheat your oven to 375°F. Place the turkey legs on a cutting board and pat them dry with paper towels — this helps the skin crisp up later.
- In a small bowl, whisk together the melted butter, salt, pepper, garlic powder, smoked paprika, and onion powder until well combined.
- Brush the mixture generously over both turkey legs, making sure to get it under the skin where possible. If any spice mix remains, rub it into the meat.
- Place the turkey legs on a roasting pan or baking sheet, bone-side down. Roast in the preheated oven for 75–90 minutes.
- Check that the internal temperature of the thickest part of the leg reaches at least 165°F (I usually pull them around 170-175°F since they'll carry over a few degrees while resting). The skin should be deep golden and crispy.
- Remove from the oven, tent loosely with foil, and let rest for 10 minutes before serving. Slice meat off the bone or serve whole — your call.
