This dish has earned its place in my kitchen because it balances earthiness with brightness in under twenty minutes. The cauliflower roasts until crisp-tender while the leeks caramelize gently in butter and thyme. It is sophisticated enough for guests but forgiving enough for a tired Tuesday. A squeeze of lemon at the end wakes everything up without making it feel heavy.

Ingredients
  

Vegetables
  • 1 large head of cauliflower cut into florets (about 4 cups)
  • 2 medium leeks white and light green parts only, thinly sliced
Fats & Herbs
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves or ½ tsp dried
Seasoning & Serving
  • Salt and freshly ground black pepper to taste
  • 1 lemon cut into wedges for serving

Method
 

  1. Prep the leeks: Place the sliced leeks in a large bowl of cold water. Swirl them around gently to release any dirt. Let them sit for 5–10 minutes, then carefully lift the leeks out with your hands or a slotted spoon, leaving the sediment behind. Drain thoroughly and pat dry with paper towels.
  2. Preheat oven: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  3. Roast cauliflower: Toss the cauliflower florets on the prepared baking sheet with olive oil, salt, and pepper. Spread them out in a single layer so they roast rather than steam. Roast for 15 minutes until edges are browning.
  4. Sauté leeks: While the cauliflower roasts, melt butter in a large skillet over medium heat. Add the drained leeks and thyme. Cook, stirring occasionally, for 8–10 minutes until soft, golden, and sweet. Season with salt and pepper to taste.
  5. Combine and finish: Remove the cauliflower from the oven. Transfer the sautéed leeks into the skillet or directly onto the baking sheet if you prefer one-pan simplicity. Toss everything together gently. Serve immediately with lemon wedges on the side.
