I made this dish after a late grocery run when I had no meat in the fridge and was too tired to start over. The lemon juice and pasta water created something unexpectedly rich — the kind of sauce that clings to every strand without feeling heavy.
It's earned its permanent slot in my cooking rotation because it requires one pot for boiling, another for tossing everything together, and about fifteen minutes of active time from start to finish. I keep a jar of capers on hand now specifically for this recipe; they add a bright punch that keeps the lemon from tasting too sweet.
My husband asks for it regularly without being asked, which is usually my only measure of success. Serve it with crusty bread and nothing else unless you're hungry enough to want more.

Ingredients
  

Pasta
  • 12 oz spaghetti or linguine
Sauce Ingredients
  • 3 tbsp unsalted butter
  • 4 cloves garlic thinly sliced
  • 2 lemons about 2 tsp zest of lemons
  • 2 lemons about ¼ cup juice of lemons
  • ½ cup grated Parmesan cheese plus more for serving
  • 1 tbsp capers drained and rinsed
  • ¾ cup reserved pasta water see Step 3
Seasoning
  • 1 tsp kosher salt for boiling water
  • ½ tsp freshly ground black pepper
  • ¼ tsp red pepper flakes
  • 2 tbsp olive oil

Method
 

  1. Bring a large pot of generously salted water to a boil. Add spaghetti and cook until al dente according to package directions, about 8 minutes. Reserve ¾ cup pasta water before draining. Set noodles aside with the reserved liquid nearby — do not rinse.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and sauté until golden and fragrant, about 2 minutes. Watch closely; garlic burns quickly and turns bitter.
  3. Stir in butter and let it melt completely into the oil. Add lemon zest and cook for 30 seconds to release its oils — you'll notice a bright citrus aroma filling the kitchen.
  4. Pour in lemon juice and the reserved pasta water. Whisk with a wooden spoon, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer and let reduce slightly, about 2 minutes. The sauce should coat the back of a spoon when you draw your finger across it.
  5. Add drained pasta directly into the skillet along with capers and red pepper flakes. Toss vigorously with tongs for about 1 minute until every strand is coated in sauce. If the mixture seems dry, add another splash of pasta water. The goal is glossy, not soupy.
  6. Remove from heat and stir in Parmesan cheese. Taste and adjust seasoning — you may need more salt or pepper depending on your pasta's saltiness and your lemon juice. Serve immediately with extra Parmesan on top.

Notes
