I tossed in too much lemon zest by accident, but that bright, bitter punch completely transformed the humble grain into something unforgettable. It’s become a staple because it requires zero active stirring and comes together while you chop herbs.

Ingredients
  

Grains and Liquid
  • 1 cup dried bulgur wheat medium grind
  • 2 cups vegetable broth or water
  • 1/2 teaspoon salt
Fats and Aromatics
  • 3 tablespoons extra-virgin olive oil divided use
  • 1 large bunch fresh flat-leaf parsley finely chopped (about 1 cup packed)
  • 1 medium lemon yellow or green, zested
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon freshly ground black pepper

Method
 

  1. Rinse the bulgur: Place the dried bulgur in a fine-mesh sieve and rinse under cold running water for about 30 seconds until the water runs clear. This step is crucial for texture. Shake off excess water.
  2. Cook the grain: In a medium saucepan, combine the rinsed bulgur, vegetable broth (or water), and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover tightly with a lid, and simmer for 10–12 minutes. Do not lift the lid during this time.
  3. Rest: Remove the saucepan from the heat but keep it covered. Let the bulgur sit for another 5 minutes. This allows any remaining moisture to absorb fully.
  4. Fluff and season: Uncover the pan and fluff the grains gently with a fork. While still warm, drizzle in 2 tablespoons of olive oil and stir to coat.
  5. Add aromatics: Transfer the bulgur to a large mixing bowl. Add the chopped parsley, lemon zest, remaining 1 tablespoon of olive oil, lemon juice, and black pepper. Toss gently until evenly distributed. Taste and adjust salt or lemon juice if needed. Serve warm or at room temperature.
