Cauliflower and apple soup

I've been making cauliflower soup for years now, but it wasn't until I added a few apples to the pot that I realized how much I was missing. The sweetness from the fruit balances the earthy depth of roasted cauliflower in a way that feels both simple and surprising.
What makes this recipe stick in my rotation is how forgiving it is — you can use any type of apple, and the soup comes together with just one pot on the stove before blending. I've found that roasting the cauliflower first gives it more flavor than boiling does, though it adds about twenty minutes to the cooking time.
The one trick that really matters: don't skip browning your butter at the end before drizzling over each bowl. The nutty browned bits add a layer of richness that makes even basic ingredients feel special.

Ingredients

Cauliflower
  • 1 large head cauliflower cut into florets (about 6 cups)
Apples & Aromatics
  • 2 medium Granny Smith apples peeled and diced
  • 3 tbsp unsalted butter
  • 1 medium yellow onion finely chopped
  • 4 cloves garlic minced
Liquids & Seasoning
  • 4 cups vegetable broth
  • 1/2 cup heavy cream or whole milk
  • 2 tsp fresh thyme leaves or 1 tsp dried
  • Kosher salt and freshly ground black pepper
  • 1 tbsp olive oil

Method

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper. Toss cauliflower florets with olive oil, sprinkle generously with salt and pepper, then spread in an even layer on the prepared pan. Roast for about 25 minutes until the edges are golden brown and tender when pierced with a fork.
  2. While the cauliflower roasts, melt butter in a large Dutch oven over medium heat. Add the diced apple and onion, cooking until softened and beginning to caramelize, about 8-10 minutes. Stir in garlic and thyme, cooking for another minute until fragrant.
  3. Pour in vegetable broth and bring to a simmer. Add the roasted cauliflower (along with any juices from the pan). Cook for 5 more minutes so flavors meld together.
  4. Using an immersion blender (or carefully transferring to a standard blender in batches), blend until completely smooth — about 2-3 minutes. Stir in cream or milk and season with salt and pepper to taste. The soup should coat the back of a spoon; if it's too thick, add more broth a splash at a time.
  5. For serving, heat a small pan over medium-high heat and melt 1 tablespoon butter until it starts foaming and turns golden brown (about 2 minutes). Ladle soup into bowls and drizzle each with the nutty browned butter.
