Saffron cake — Fresh homemade recipe photo

Saffron cake

I started making this cake after a friend brought one to my kitchen last winter. I took one bite through the morning light filtering over the counter and realized how much I'd been missing saffron in something other than rice.
The scent alone is worth it — that bright, almost honeyed perfume fills the whole house while it bakes. I keep a small tin of saffron threads on my spice shelf because once you've tasted real saffraon in cake, the powder versions feel like they cheated you out of something.
If your saffron is old (and mine often gets lost in drawer rotations), give it a quick grind before using and let it steep longer. I learned that trick when a batch came out pale and underwhelming — the color was right but the flavor had gone dormant somewhere between my pantry and the bowl.

Ingredients

For the saffron infusion
  • 1/4 cup whole milk or half-and-half
  • 1 tsp high-quality saffron threads lightly crushed
  • Pinch salt
Dry ingredients
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 3/4 cup granulated sugar
Wet ingredients
  • 1/2 cup unsalted butter softened to room temperature
  • 3 large eggs at room temperature
  • 2 tsp vanilla extract
Optional topping
  • 2 tbsp coarse turbinado sugar for sprinkling

Method

  1. Preheat your oven to 350°F and grease an 8-inch round cake pan, or line it with parchment for easy removal.
  2. Warm the milk in a small saucepan over low heat until just barely steaming — about 140°F if you have a thermometer, but don't bother if you'd rather not wrestle one out. Pour over the crushed saffron threads and let them steep while you prep everything else. The milk should turn a vivid golden-orange within five minutes.
  3. In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined. Set aside.
  4. Using an electric mixer on medium speed, beat the softened butter and sugar together for about 3 minutes until pale and creamy — this is where you'll get that light crumb structure.
  5. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of your bowl with a spatula to make sure everything's incorporated evenly. Beat in the vanilla extract.
  6. Pour in the saffron-infused milk (straining out the threads if you prefer — I leave mine in for texture). Mix on low until just combined; overmixing at this stage makes the cake dense instead of tender.
  7. Add about a third of your dry ingredients and mix gently, then pour in half the liquid, followed by another third of dry, the rest of the liquid, and finish with whatever dry ingredients are left. Stop mixing as soon as no streaks of flour remain — you want the batter to look slightly lumpy, not silky smooth.
  8. Pour into your prepared pan and sprinkle with turbinado sugar if using. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean or with just a few moist crumbs clinging to it. The cake should pull away slightly from the sides of the pan.
  9. Let cool in the pan for about ten minutes, then turn out onto a wire rack to finish cooling completely before slicing.
