I found myself making these lettuce wraps three times in one week last month. I blame the 20-minute window between dinner and bedtime, where convenience wins every time. The crunch of the romaine against the savory, slightly sweet filling is exactly what I crave when my energy is low but my standards aren’t.

Ingredients
  

Mushroom Mixture
  • 1 lb cremini mushrooms finely chopped (about 4 cups)
  • 1 tbsp neutral oil like avocado or vegetable
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 2 green onions thinly sliced (whites and greens separated)
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 0.5 tsp chili crisp or sriracha optional, for heat
  • Salt and freshly cracked black pepper to taste
Assembly & Garnish
  • 1 large head butter lettuce or romaine hearts leaves washed and dried
  • Optional garnishes: cilantro crushed peanuts, lime wedges

Method
 

  1. Prep the mushrooms: Place your chopped mushrooms in a clean kitchen towel or several layers of paper towels. Squeeze firmly to remove as much moisture as possible. This is crucial for getting a good sear rather than steaming them.
  2. Sauté aromatics: Heat the neutral oil in a large skillet over medium-high heat. Add the white parts of the green onions and cook for 30 seconds until fragrant. Stir in the garlic and ginger, cooking for another 15 seconds until aromatic but not browned.
  3. Cook mushrooms: Add the squeezed mushrooms to the skillet. Spread them out in an even layer. Let them sit undisturbed for 2 minutes to develop a deep golden-brown color. Stir and cook for another 3-4 minutes until any remaining moisture has evaporated and the mushrooms are tender.
  4. Add sauce: Reduce heat to medium-low. Pour in the soy sauce, hoisin sauce, sesame oil, and chili crisp if using. Toss well to coat every mushroom piece. Cook for 1 minute until the sauce thickens slightly and clings to the mushrooms.
  5. Season: Taste and add salt or pepper as needed. Hoisin and soy can vary in saltiness, so adjust carefully. Stir in the green onion tops.
  6. Serve immediately: Spoon the warm filling into cool lettuce leaves. Top with crushed peanuts or extra cilantro if desired. Eat right away while the lettuce is crisp and the filling is hot.

Notes

The secret isn’t fancy sauce; it’s squeezing that extra liquid out of the mushrooms before they hit the pan. If you skip that step, your wraps turn into a soggy mess. I squeeze them firmly over the sink until my hands are dry, and then the garlic and ginger actually toast instead of steaming.
I keep a head of butter lettuce in the fridge at all times for this. It’s crisp, mild, and holds together better than iceberg. Just peel off the leaves, wash them, and spin them dry before you start cooking so they stay crunchy until that first bite.
