I found the secret to juicy turkey meatballs in my own kitchen when I accidentally swapped plain breadcrumbs for panko. The lighter texture absorbed the panade—a mixture of milk and grated onion—without turning dense, creating a tender bite that held together perfectly during baking.

Ingredients
  

For the Meatball Mixture
  • 1 lb ground turkey 85% lean or higher
  • 0.5 cup panko breadcrumbs
  • 0.25 cup whole milk
  • 1 large egg lightly beaten
  • 0.5 cup onion finely grated (see note above)
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Baking/Serving
  • 1 cup marinara sauce divided use
  • Fresh basil chopped (optional garnish)

Method
 

  1. Prepare the panade: In a small bowl, combine the panko breadcrumbs and milk. Let it sit for 5 minutes until the crumbs have fully absorbed the liquid. This step is crucial for moisture retention in lean turkey.
  2. Mix gently: In a large mixing bowl, combine the ground turkey, soaked breadcrumb mixture, beaten egg, grated onion, minced garlic, olive oil, oregano, salt, and pepper. Use your hands or a fork to mix just until combined. Do not overwork the meat, or the meatballs will become tough.
  3. Form the meatballs: Line a baking sheet with parchment paper or foil. Roll the mixture into uniform balls, approximately 1.5 inches in diameter (about 2 tablespoons per ball). Place them on the prepared sheet.
  4. Sear (Optional but Recommended): Heat a large skillet over medium heat with a splash of oil. Sear the meatballs for 1-2 minutes on all sides to develop color and flavor. Transfer seared meatballs back to the baking sheet. Note: You can skip this step and bake raw meatballs directly if short on time.
  5. Bake: Preheat your oven to 400°F (200°C). Place the baking sheet in the oven and bake for 15-18 minutes, or until the internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer.
  6. Finish: If serving in sauce, gently toss the cooked meatballs into a pot of warm marinara sauce. Simmer for 2-3 minutes to allow flavors to meld. Serve immediately garnished with fresh basil.

One small adjustment: squeeze every drop of liquid from your grated onion before adding it to the bowl. This prevents the mixture from getting watery and ensures your meatballs bake evenly rather than steaming in their own juices.
