The first time I made this, the leftover turkey was practically frozen solid. I’d chopped it too small, ended up with rubbery bits in every bite, and realized I needed bigger chunks to hold up against the sauce without turning into mush.

Ingredients
  

The Ravioli & Meat
  • 1 lb turkey breast leftover from Thanksgiving, cut into 1-inch cubes (do not mince)
  • 1 box 9 oz frozen cheese ravioli
  • 2 cups stuffing preferably dry or stale (see note in description)
The Sauce
  • 4 tbsp unsalted butter
  • 8 fresh sage leaves
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese plus more for serving
  • Salt and black pepper to taste

Method
 

  1. Prep the protein: If your leftover turkey is cold from the fridge, let it sit at room temperature for 10 minutes while you preheat your pan. This ensures it heats through evenly without overcooking. Cut into uniform 1-inch cubes; avoid shredding or mincing to maintain texture.
  2. Brown the butter: In a large skillet over medium heat, melt the butter. Add the sage leaves and let them sizzle gently until they become crisp and the butter turns a light golden brown (about 3-4 minutes). Watch closely so it doesn’t burn. Remove sage leaves with a slotted spoon and set aside on a paper towel; you’ll use them for garnish later.
  3. Sauté aromatics: Add the minced garlic to the browned butter. Cook for just 30 seconds until fragrant. Do not let the garlic brown, or it will turn bitter.
  4. Build the sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let it simmer for 1 minute to reduce slightly. Stir in the heavy cream and bring to a gentle bubble.
  5. Cook pasta: While the sauce simmers, boil the ravioli in salted water according to package directions (usually 3-4 minutes). Drain well. Do not rinse.
  6. Combine: Add the cubed turkey and stuffing directly into the skillet with the sauce. Toss gently to coat everything in the creamy sauce. Let it heat through for about 1 minute. The internal temperature of the turkey should reach at least 140°F (60°C) to be safe and warm, but avoid boiling vigorously or the meat will dry out.
  7. Finish: Remove from heat. Stir in the Parmesan cheese until melted and smooth. Season with salt and freshly cracked black pepper to taste. The sauce should coat the back of a spoon; if it’s too thick, add a splash of pasta water.
  8. Serve: Plate immediately. Garnish with the crispy sage leaves reserved earlier and extra Parmesan.

Leftover stuffing works best if it’s dry or stale, so toss it in the oven for five minutes first if it feels soggy. It absorbs the sauce better and keeps its texture instead of turning to mush.
