I used to think no-bake cheesecakes were just shortcuts for lazy days until I realized how much better they taste when you don’t have to babysit an oven. This summer berry version earned its permanent spot in my rotation because the graham cracker crust stays crisp against the tangy filling, even after sitting out for a party.

Ingredients
  

For the Crust
  • 1.5 cup graham cracker crumbs about 10-12 full sheets, crushed finely
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
For the Filling
  • 2 package 8 oz each full-fat cream cheese, softened to room temperature
  • 0.5 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 Zest of 1 lemon optional, for brightness
  • 1 cup heavy whipping cream cold
For the Berry Topping
  • 2 cup fresh mixed berries strawberries, blueberries, raspberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tsp water slurry

Method
 

  1. Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand. Press this firmly into the bottom of a 9-inch springform pan using the back of a measuring cup or your fingers. Ensure there are no gaps. Chill in the refrigerator while you make the filling.
  2. Whip the Cream: In a large bowl, beat the cold heavy cream with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat into butter. Set aside in the fridge.
  3. Make the Filling Base: In a separate large bowl, beat the softened cream cheese and sugar on medium speed until completely smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl. Add vanilla extract and lemon zest (if using) and mix briefly to combine.
  4. Fold Together: Gently fold the whipped cream into the cream cheese mixture using a spatula. Use a cutting motion rather than stirring vigorously to keep the air in the mixture. The filling should be light and fluffy but hold its shape when you lift the spatula.
  5. Assemble: Remove the crust from the fridge. Pour the filling over the crust and smooth the top with an offset spatula or butter knife. Tap the pan gently on the counter to release air bubbles. Cover loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until firm.
  6. Cook the Berries: While the cheesecake chills (or just before serving), combine the berries, sugar, and lemon juice in a small saucepan over medium heat. Cook for 3-5 minutes until the berries break down slightly and release juices. Stir in the cornstarch slurry and cook for another 1 minute until thickened. Let cool completely to room temperature. Note: For a fresh look, you can skip cooking the berries and just toss them with sugar and lemon juice, but the cooked version holds its shape better on slices.
  7. Serve: Run a thin knife around the edge of the springform pan before releasing the clasp. Slice with a sharp knife wiped clean between cuts for neat wedges. Spoon the cooled berry mixture over each slice or serve it on the side.

Notes

The secret is letting the berries macerate while the cheesecake sets; their juices bleed into the cream cheese slightly, creating a marbled effect that looks professional but requires zero effort. I always line my springform pan with foil first—this makes lifting the cake out of the pan effortless and keeps the bottom crust intact when you slice it.
