  • 1 cup frozen strawberries do not thaw, roughly chopped

  • 1 tbsp water
For the Cream Cheese Frosting
  • 8 oz cream cheese softened to room temperature
  • 1/2 cup unsalted butter softened to room temperature
  • 3-4 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Prep the Pan and Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with butter or non-stick spray, then line the bottom with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl using an electric mixer on medium speed, beat the softened butter and granulated sugar together for about 3-4 minutes until the mixture is light, fluffy, and pale in color. This step incorporates air, which ensures a tender crumb.
  4. Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl with a spatula to ensure even mixing. Mix in the vanilla extract.
  5. Combine Wet and Dry: With the mixer on low speed, add the flour mixture in three parts, alternating with the sour cream in two parts, beginning and ending with the flour mixture. Mix until just combined; do not overmix. The batter will be thick.
  6. Prepare Strawberry Jam Mixture: In a small bowl, whisk the strawberry jam and water together until smooth to create your swirl liquid.
  7. Assemble Layers: Spread half of the cake batter into the prepared pan. Spoon dollops of the strawberry jam mixture randomly over this layer. Take a knife or skewer and gently drag it through the jam in circular motions to create a marbled effect. Do not stir too much, or the pink will disappear.
  8. Add Final Layer: Spread the remaining batter evenly over the swirled bottom layer. Gently spread it out without digging into the swirls below.
  9. Bake: Bake for 35-40 minutes. The cake is done when the top is golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs (no wet batter). If the top browns too quickly, tent it loosely with aluminum foil after 25 minutes.
  10. Cool Completely: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before frosting. This is crucial; if you frost a warm cake, the butter will melt and slide off.
  11. Make Frosting: While the cake cools, beat the softened cream cheese and butter together on medium-high speed until smooth and creamy (about 2 minutes). Scrape down the bowl. Gradually add the sifted powdered sugar, vanilla, and salt, beating on low until combined, then increase to high for 1 minute until fluffy.
