Sticky cranberry sausages

When I first made this dish, I burned the first batch because I didn't wait long enough for the sausage to get its crust. The trick is letting those links brown properly before adding anything else—once they're deeply golden and slightly crusted, everything else falls into place.
I make this in my biggest skillet when we need something that feels special but doesn't require pulling out multiple pans or spending hours at the stove. The sweet-tangy sauce clings to each sausage beautifully, and I've learned to taste it before serving—it's better slightly under-sauced than swimming in liquid.
The best part is how forgiving this recipe is if you don't have every spice on hand. I've made it with just brown sugar, soy sauce, and apple cider vinegar many times without missing a thing. It keeps well for leftovers, reheats nicely, and tastes even better the next day when the flavors have had time to meld.

Ingredients

For the sausages
  • 4 pounds sweet Italian sausage links about 8 large or 12 small, pricked with a fork
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
For the sauce
  • â…” cup packed brown sugar
  • ¼ cup soy sauce or tamari
  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 small onion thinly sliced (optional, for extra depth)
For serving (optional)
  • Chopped fresh parsley or chives
  • Toasted sesame seeds
  • Crusty bread or rice

Method

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper if you're using one later. Pat the sausage links completely dry with paper towels—this is essential for good browning.
  2. Heat olive oil in a large, heavy skillet (cast iron works beautifully) over medium-high heat until shimmering. Season sausages lightly with salt and pepper on all sides. Place them in the hot skillet without crowding—you may need to work in batches—and let them brown undisturbed for 3-4 minutes per side until deeply golden and slightly charred. Remove to a plate once well-browned.
  3. While sausages are browning, whisk together brown sugar, soy sauce, apple cider vinegar, Dijon mustard, and honey in a small bowl until smooth. If using the onion, add it to the skillet with any drippings left behind and cook for 2-3 minutes until softened.
  4. Return browned sausages to the skillet along with the sauce mixture. Bring to a bubble, then transfer the entire skillet (or transfer everything to your parchment-lined baking sheet) to the oven. Bake for 15-20 minutes, turning sausages once halfway through, until they're cooked through and glistening.
  5. Remove from oven and let rest for 3-4 minutes—the sauce will continue to thicken slightly as it cools. Taste and adjust seasoning if needed; add a pinch more salt or a splash of vinegar if something tastes flat.
  6. Serve warm, spooning extra sauce over the top. Drizzle with sesame seeds or sprinkle with fresh herbs if desired.

Notes

Substitutions: You can use any type of sausage—bratwurst, kielbasa, or even hot Italian sausage if you want a little heat. If you're using pre-cooked sausages, reduce the oven time to 10 minutes since they just need heating through and glazing.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. The sausages can be reheated in the microwave with a splash of water to keep them moist, or warmed gently in a skillet over medium heat. The sauce thickens when cold but loosens back up with gentle heating.
Make-ahead: You can brown and glaze the sausages completely ahead of time. Let them cool, then refrigerate for up to 2 days before reheating as directed above. This works particularly well if you're planning a dinner party where you want to minimize last-minute work.
