Salisbury Steak, Mashed Potatoes, and Peas

No ratings yet
I still remember the first time I nailed the gravy consistency for this dish. It wasn't magic, just a steady hand with the whisk and a splash of beef broth when I realized I’d added too much flour to thicken it up. That single adjustment turned a clumpy mess into something silky enough to coat a spoon without weighing it down.

Ingredients

For the Salisbury Steaks
  • 1 lb ground beef 80/20 blend works best
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg beaten
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried parsley
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil or butter for frying
For the Mushroom Gravy
  • 8 oz cremini mushrooms sliced
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups beef broth
  • ¼ cup dry red wine optional or extra beef broth
  • 1 tsp soy sauce
  • Salt and black pepper to taste
For the Mashed Potatoes
  • 2 lbs russet potatoes peeled and cubed
  • 4 tbsp unsalted butter softened
  • ½ cup heavy cream warmed
  • ½ tsp salt
  • ¼ tsp white pepper optional
For Serving
  • 1 lb frozen peas thawed or fresh
  • 2 tbsp butter

Method

  1. Prepare the meat mixture: In a large bowl, combine the milk and breadcrumbs; let sit for 5 minutes. Add the ground beef, egg, Worcestershire sauce, parsley, garlic powder, onion powder, salt, and pepper. Mix gently with your hands just until combined—overmixing will make tough patties. Form into 6 oval patties about ½-inch thick.
  2. Sear the steaks: Heat olive oil or butter in a large skillet (cast iron is ideal) over medium-high heat. Add the patties and cook for 3-4 minutes per side until deeply browned. They do not need to be cooked through yet. Remove steaks from the pan and set aside on a plate.
  3. Sauté aromatics: Reduce heat to medium. Add the sliced mushrooms and diced onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until the onions are translucent and mushrooms have released their moisture and browned. Add the garlic and cook for 1 minute more until fragrant.
  4. Make the roux: Sprinkle the flour over the mushroom mixture and stir constantly for 1-2 minutes to cook off the raw flour taste. This creates a light golden color.
  5. Deglaze and simmer</

Notes

Now, this combination lives permanently in my kitchen rotation because it delivers maximum comfort with minimal fuss. The key is letting the steak rest after searing so the juices stay put, then deglazing that same pan for the sauce. Simple ingredients, one main skillet, and a side of creamy potatoes make dinner feel special without requiring extra dishes.
