When I first roasted parsnips, they turned out pale and tough until I started tossing them in maple syrup instead of just oil. The sugar caramelizes at a higher rate than the vegetable cooks, creating this sticky, amber glaze that clings to every ridge.

  • 1 lb parsnips about 4 medium, peeled and cut into 1-inch chunks
  • 2 tbsp pure maple syrup
  • 1 tbsp olive oil or melted butter
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp kosher salt plus more to taste
  • 0.25 tsp freshly cracked black pepper

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a large bowl, combine the parsnip chunks, maple syrup, olive oil, smoked paprika, cumin, salt, and pepper. Toss gently until every piece is evenly coated; the mixture should look glossy but not soupy.
  3. Spread the parsnips in a single layer on the prepared baking sheet. Ensure they are not crowded; if pieces overlap too much, steam instead of roast, leading to soggy edges.
  4. Roast for 25 minutes. Remove the pan and use a spatula to flip each piece over. This ensures even browning on all sides.
  5. Return to the oven and roast for another 10–15 minutes, or until the parsnips are fork-tender and deeply caramelized at the edges. Watch closely during the last few minutes as the maple syrup can burn quickly.
  6. Remove from the oven and let cool for 2 minutes before serving. Taste and add a pinch more salt if needed.

Notes

I keep these in rotation because they require almost no active effort. Just chop, toss with spices, and let the oven do the heavy lifting. The maple adds enough sweetness to balance the earthy roots so you don't need extra sides.
