I've made these pancakes so many times now that I can close my eyes and feel the difference between a pancake cooked too fast (browned outside, raw inside) and one where the butter has just enough time to melt into the edges.
What makes them worth keeping around is how much blueberry flavor actually gets distributed through every bite — not just the ones you get when you're lucky enough to pluck a berry out of the top. Folding in half the berries after they've cooked for thirty seconds gives each pancake pockets without turning everything into a mushy purple mess. The lemon zest cuts right through that sweetness, and I always add a little extra drizzle on top.
I keep this recipe because it's generous enough to feel like something special but simple enough that I'm not fighting with three different bowls while trying to get dinner going. If you're making them for guests, set the pan over medium heat and resist the urge to flip too early — the edges should look dry before you turn them.

  • 2 large eggs beaten
  • 1 1/2 cup buttermilk or milk + 2 tbsp lemon juice
  • 3 tbsp unsalted butter melted and slightly cooled
  • 1 medium lemon zest zest of 1 medium lemon
  • 1 tsp vanilla extract
For the blueberries
  • 1 cup fresh or frozen blueberries
  • 1 tbsp granulated sugar
  • 1 pinch salt

Method
 

  1. Prep the blueberries. In a small bowl, toss blueberries with 1 tablespoon sugar and pinch of salt. Set aside — this draws out their juices so they flavor the batter without bleeding too much color. If using frozen berries, skip thawing; just add them straight from the freezer (they'll cook in the pan).
  2. Whisk dry ingredients. In a large bowl, whisk together flour, 2 tbsp sugar, baking powder, baking soda, and salt until no lumps remain. This matters — if your baking powder is old or hasn't been mixed thoroughly, your pancakes will be flat.
  3. Combine wet ingredients. In another bowl (or measuring cup), beat eggs with buttermilk, melted butter, lemon zest, and vanilla. The butter should be warm enough to stir easily into the milk but not so hot it cooks the eggs — if you see little egg strands, let it sit for a minute before adding.
  4. Mix batter gently. Pour wet ingredients into dry. Stir with a fork or spatula until just combined — there will still be lumps, and that's exactly right. Overmixing is the most common mistake here; your pancakes get tough if you treat this like cake batter. Let it rest for 5 minutes while you heat the pan.
  5. Heat the pan. Use a heavy skillet or nonstick griddle over medium-low heat (I'd say around 300°F/150°C). Test with a few drops of water — they should dance and evaporate within two seconds, not sizzle violently. Add butter or oil if your pan isn't truly nonstick.
  6. Cook the pancakes. Pour about 1/4 cup batter per pancake onto the hot surface. Scatter 2-3 blueberries on top of each pancake immediately (this keeps them from sinking). Cook for 2-3 minutes until bubbles form across the surface and the edges look set, then flip. Cook another 1-2 minutes until golden. If your pan runs hot or cold, adjust heat accordingly — you want a steady medium that gives you time to flip without burning.
  7. Finish and serve. Keep cooked pancakes warm in a 200°F oven while finishing the batch (stack them on a plate with parchment between layers). Serve immediately with butter and syrup. They're at their best within minutes of cooking — they continue steaming as they cool, which is why they taste better than second-batch pancakes.
