I discovered this combination when I accidentally dropped a handful of frozen raspberries into a bowl of leftover white chocolate ganache. The shock of the cold fruit against the warm sauce created an instant glaze that looked stunning and tasted like dessert had been waiting for me all along.

Ingredients
  

For the White Chocolate Sauce
  • 8 oz high-quality white chocolate chips or chopped couverture bar 225g
  • 1/4 cup heavy cream 60ml
  • 2 tbsp limoncello 30ml
  • 1 tsp lemon zest finely grated
For the Berries
  • 1 pint fresh raspberries or blackberries or frozen berries, slightly thawed
  • 1/2 cup water only needed if using frozen berries to create a syrup base
  • 1 tbsp honey optional, depending on berry sweetness

Method
 

  1. Prepare the Sauce: Place the white chocolate chips in a heat-proof medium bowl. In a small saucepan over low heat, warm the heavy cream until it just begins to simmer (do not boil). Pour the hot cream over the white chocolate and let it sit for 2 minutes without stirring.
  2. Emulsify: Gently stir the mixture with a silicone spatula starting from the center until the chocolate is completely melted and smooth. If any lumps remain, microwave in 10-second bursts, stirring between each, until glossy.
  3. Flavor: Stir in the limoncello and lemon zest. The sauce will thicken slightly as it cools. Transfer to a jar or squeeze bottle for easy pouring. Let it cool completely to room temperature before serving; it should be pourable but viscous, like warm honey.
  4. Prep the Berries: If using fresh berries, wash and dry them thoroughly. Moisture prevents the sauce from adhering properly. If using frozen berries, toss them with a tiny splash of water in a microwave-safe bowl and heat for 30-45 seconds just until they release some juices but are still cold.
  5. Assemble: Arrange the berries on individual plates or small dessert dishes. Drizzle the limoncello white chocolate sauce generously over the berries. Serve immediately to enjoy the contrast of temperatures and textures.
