  • 4 cups fresh spinach or baby kale

Method
 

  1. Prep the Chicken: Pat the chicken thighs completely dry with paper towels; this is key for getting crispy skin. Season generously on both sides with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
  2. Sear the Chicken: Place the chicken in the hot pan, skin-side down. Let it cook undisturbed for about 6 to 7 minutes until the skin is deep golden brown and crispy. Flip carefully, season again with a pinch of salt, and cook for another 5-6 minutes until the internal temperature reaches 160°F (71°C). Let everything rest together for 5 minutes before serving to let the flavors meld.
