The first time I made these calzones, I forgot to let the dough rest and they turned out tough. Now I always prep the filling while the yeast wakes up, which saves time and keeps things relaxed.
I keep a batch of this simple tomato sauce in the fridge because it’s faster than opening a jar when hunger strikes. The key is sealing them tight with a fork so the cheese doesn’t leak into the oven.

Ingredients
  

For the Dough
  • 1 cup warm water 110°F/43°C
  • 1 packet active dry yeast
  • 1 tsp sugar
  • 3-3.5 cups all-purpose flour
  • 1 tbsp olive oil plus more for bowl
  • 1 tsp salt
For the Filling
  • 1 cup ricotta cheese whole milk
  • 1 cup mozzarella cheese shredded and divided
  • 0.5 cup Parmesan cheese grated
  • 2 large eggs lightly beaten
  • 1 tbsp fresh parsley chopped
  • 0.25 tsp black pepper
  • Cooking spray or olive oil for brushing
For Serving
  • 1 cup marinara sauce warmed
  • Fresh basil leaves optional

Method
 

  1. Make the dough: In a large bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy. Stir in olive oil, salt, and 3 cups of flour. Mix until a shaggy dough forms.
  2. Knead: Turn dough onto a floured surface. Knead for about 8-10 minutes, adding remaining flour as needed until the dough is smooth and elastic but still slightly tacky. Do not over-flour.
  3. Rise: Place dough in an oiled bowl, turning once to coat. Cover with a damp towel or plastic wrap. Let rise in a warm place for 1-2 hours, or until doubled in size.
  4. Prepare filling: While dough rises, whisk together ricotta, ½ cup mozzarella, Parmesan, eggs, parsley, and pepper in a small bowl. Set aside.
  5. Divide and shape: Punch down risen dough. Divide into 4 equal portions. Roll each portion into an oval about 1/8-inch thick on a lightly floured surface.
  6. Fill: Spoon filling onto one half of the oval, leaving a 1-inch border. Fold the other half over the filling to create a half-moon shape.
  7. Seal: Press edges firmly with your fingers. Then, use a fork to crimp the edges tightly all around. Poke 2-3 small slits in the top of each calzone with the fork tip to allow steam to escape.
  8. Bake: Place calzones on a parchment-lined baking sheet. Brush tops lightly with olive oil or egg wash for browning (optional). Bake at 400°F (200°C) for 15-18 minutes until golden brown and crispy.
  9. Cool slightly: Let cool for 5 minutes before slicing to allow cheese to set. Serve warm with marinara sauce on the side.

Notes

  • Dough Prep: You can make this dough ahead and refrigerate it for up to 2 days. Let it come to room temperature before rolling.
  • Freezing: Freeze unbaked calzones on a baking sheet until solid, then transfer to a freezer bag. Bake from frozen at 375°F (190°C) for 20-25 minutes.
  • Filling Variations: Add cooked sausage or sautéed spinach for extra flavor and nutrition. Ensure any wet ingredients are cooled before mixing with ricotta to prevent soggy dough.
