I learned the hard way that boiling tomatillos dulls their edge. After a few watery salsas, I switched to roasting them under the broiler until the skins blistered and blackened. That char unlocks a smoky depth that boiling simply can’t match, transforming sharp acidity into something complex and rich.

Ingredients
  

Tomatillos & Aromatics
  • 1 lb fresh tomatillos husks removed and rinsed
  • 2 cloves garlic peeled
  • 1 jalapeño pepper stemmed (leave seeds in for more heat)
  • 1/2 small white onion quartered
Seasoning & Herbs
  • 1/4 cup packed fresh cilantro leaves
  • 1 tsp kosher salt
  • 1 tbsp lime juice freshly squeezed

Method
 

  1. Preheat your oven broiler to high and line a baking sheet with aluminum foil for easy cleanup. Arrange the rinsed tomatillos, garlic cloves, jalapeño, and onion quarters in a single layer on the prepared sheet.
  2. Broil for 8–10 minutes, watching closely after the first 5 minutes. You are looking for the tomatillos to soften significantly and develop blackened spots on their skins. Rotate the pan halfway through to ensure even charring. The garlic should look golden and soft, not burnt.
  3. Carefully transfer the roasted ingredients to a blender or food processor. Allow them to sit for about 5–10 minutes; this lets the steam escape and prevents the mixture from becoming watery or mushy due to trapped heat.
  4. Add the fresh cilantro, kosher salt, and lime juice to the cooled vegetables. Pulse several times until you reach your desired consistency. For a chunkier salsa, pulse briefly. For a smoother dip, blend until uniform. Taste and add more salt if needed.

I keep this in rotation because it requires almost zero active effort. The key is letting the roasted veggies cool slightly before blending; steaming them immediately makes the texture mushy instead of vibrant.
