Buffalo Chicken Salad

I made this salad three times in a row last month because I kept forgetting to set the timer for the chicken. It's been on my regular rotation ever since — nothing fancy, just something that feels good to eat when you're tired of reheating leftovers.

Ingredients

For the chicken
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
For the buffalo sauce
  • 1/3 cup Frank's RedHot hot sauce or similar
  • 2 tbsp unsalted butter melted
  • 1 tsp white vinegar
  • pinch cayenne pepper
  • pinch salt
For the salad
  • 8 cups romaine lettuce chopped into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup blue cheese crumbles or gorgonzola
  • 1/3 cup red onion thinly sliced
  • 1/4 cup fresh cilantro leaves roughly chopped
Optional toppings
  • 2 hard-boiled eggs quartered
  • 1/2 avocado diced
  • crusty bread on the side

Method

  1. Season and cook the chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and olive oil. Heat a large skillet over medium-high heat (about 400°F). Cook the chicken for 6-7 minutes per side until golden brown and cooked through — internal temperature should reach 165°F at the thickest part. Remove from the pan and let rest for 5 minutes before slicing or cubing.
  2. Make the buffalo sauce: While the chicken rests, combine the hot sauce, melted butter, white vinegar, cayenne, and salt in a large bowl. Whisk until smooth and well combined. The mixture should be glossy and slightly thickened — about the consistency of heavy cream. Taste and adjust seasoning; add more cayenne if you want extra heat.
  3. Toss the chicken: Add the warm, sliced or cubed chicken to the buffalo sauce bowl. Toss gently until every piece is evenly coated. Let sit for 2-3 minutes so the flavors meld together.
  4. Assemble the salad: In a large serving bowl, combine the chopped romaine, cherry tomatoes, blue cheese crumbles, red onion, and cilantro. Add the buffalo chicken on top. Toss everything together just before serving to keep the lettuce crisp — you want it slightly dressed but not soggy.
  5. Serve immediately: Plate the salad and add any optional toppings like hard-boiled eggs or avocado. The buffalo sauce will continue to coat the greens as it sits, so serve right away if you prefer maximum crunch.

Notes

The key is letting the buffalo sauce actually coat the chicken before you toss it with everything else. I learned this by trial and error after one too many bowls where the dressing pooled at the bottom instead of clinging to each piece. A quick stir right before assembling makes all the difference.
I usually keep a jar of Frank's RedHot in my pantry for emergencies, but when I have time, I mix my own with a little extra vinegar and hot sauce — it has more depth without the sweetness that some brands add. Serve it over any greens you have on hand; romaine holds up best, but arugula adds a nice bitterness.
