Ingredients
  

Chicken Coating
  • 2 large boneless skinless chicken breasts (about 1 lb), pounded to an even ½-inch thickness
  • 0.5 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 egg lightly beaten
  • 2 tbsp olive oil divided
  • Salt and freshly cracked black pepper to taste
For the Tomato Topping:
  • 4 medium Roma tomatoes diced small (about 3 cups)
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 0.25 cup fresh basil leaves thinly sliced (chiffonade)
  • 2 cloves garlic minced fine
  • 0.5 tsp kosher salt
  • 1 tbsp extra virgin olive oil

Method
 

  1. Prep the topping: In a bowl, combine diced tomatoes, red wine vinegar, honey, minced garlic, and kosher salt. Toss gently and let sit at room temperature for at least 15 minutes to allow flavors to meld. Stir in fresh basil just before serving.
  2. Dred the chicken: Set up a dredging station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten egg, and one mixed with panko, Parmesan, Italian seasoning, and 1 tsp olive oil. Coat each chicken breast in flour (shaking off excess), then dip in egg, ensuring full coverage, then press firmly into the breadcrumb mixture to adhere.
  3. Sear: Heat a large skillet over medium-high heat with remaining 1 tbsp olive oil. Add chicken breasts and cook undisturbed for 4-5 minutes until golden brown and crispy. Flip carefully.
  4. Cook through: Reduce heat to medium-low, cover the pan, and continue cooking for another 3-4 minutes, or until internal temperature reaches 165°F (74°C). Check doneness with an instant-read thermometer inserted into the thickest part.
  5. Serve: Transfer chicken to plates. Spoon a generous amount of macerated tomato mixture over each breast. Serve immediately while the crust is still crisp.
