Biscotti with limoncello

The first time I pulled these out of the oven, the kitchen smelled like a limoncello shop on a hot afternoon. I was expecting sweet biscotti — crunchy cookies you'd dip into espresso — but what came out were something in between: lemon-scented, lightly tangy, and crisp enough to last weeks on the counter.

Ingredients

Dry ingredients
  • 2 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 large lemons yellow or Meyer zest of
Wet ingredients
  • 3 large eggs room temperature
  • â…“ cup limoncello
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract

Method

  1. Heat oven to 350°F. Line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large bowl, whisk eggs until well beaten. Add sugar, limoncello, oil, vanilla, and lemon zest. Mix until smooth and slightly frothy — about 30 seconds.
  4. Pour the wet ingredients into the dry. Stir with a wooden spoon or rubber spatula just until combined. The dough will be thick and sticky; don't overwork it.
  5. Divide dough in half on your prepared baking sheet, then shape each piece into a long loaf about 12 inches long and 3 inches wide. Use wet hands if the dough sticks to you.
  6. Bake for 25 minutes until lightly golden and firm to the touch. Remove from oven and let cool on the pan for 10 minutes — this is when you'll slice them.
  7. Slice each loaf diagonally into ½-inch thick cookies with a serrated knife. Lay them flat side down on the baking sheet.
  8. Reduce oven to 250°F and return cookie slices for another 20–25 minutes until dry but not browned. They'll crisp up further as they cool completely.
  9. Let biscotti cool fully before storing in an airtight container at room temperature — they'll keep for up to two weeks, which is honestly rare for baked goods that actually taste good past day three.

Notes

I've made this recipe at least thirty times since then, and it's earned its place in my regular rotation because it does exactly what I need: minimal prep, a few active minutes while they bake, and nothing complicated you have to worry about. The limoncello gets folded into the dough early on, so every bite carries that bright, boozy lemon without any extra steps.
The trick is letting them dry out properly after baking — I learned this the hard way when my first batch came out chewy instead of crisp. Two short bakes with a cool in between does it: one to set shape, another to dry through so they crackle satisfyingly when you break them apart.
