Apple Cheddar Palmiers

The first time I made these palmiers I forgot to flip them and got a dark ring of caramelization around the edge like a crown. It tasted better than it should have—richer, almost nutty—and that's when I knew puff pastry had found its permanent home in my rotation.
I keep frozen sheets on hand specifically for this recipe because there's something deeply satisfying about unrolling cold dough and watching it bloom under the oven's heat. The combination of sharp cheddar and sweet apple slices is classic enough to feel familiar but interesting enough that people ask for the recipe even when they've had them before.
One thing I learned the hard way: brush every surface of each layer with melted butter between folds. That extra fat makes all the difference in achieving those beautiful, shattering layers once you slice through the finished roll.

Ingredients

Puff Pastry
  • 1 sheet frozen puff pastry about 8 oz, thawed but still cold
Butter
  • 3 tbsp butter melted and divided
Apple
  • 1 tart apple such as Granny Smith or Honeycrisp, thinly sliced into rounds about â…›-inch thick
Cheese & Seasoning
  • ½ cup finely shredded sharp cheddar cheese
  • 1 tsp fresh thyme leaves lightly bruised
  • ¼ tsp freshly cracked black pepper
  • Pinch flaky sea salt for finishing

Method

  1. Prep the pastry: Unfold your puff pastry sheet on a lightly floured surface. Using a sharp knife, trim it into a 10-by-14-inch rectangle if needed—the dough will shrink as you work.
  2. First butter layer: Brush half of the melted butter evenly over the entire surface. Sprinkle one-third of the shredded cheddar and all the thyme over top, spreading them out but not quite to the edges.
  3. First fold: Fold each long side toward the center so they meet in the middle with a small gap between them (about ½ inch). Brush those exposed surfaces with another thin layer of butter.
  4. Second fold: Now fold the two halves together like closing a book, pressing gently to seal. You should have a thick rectangle about 5-by-10 inches at this point.
  5. Rest and chill: Wrap in plastic wrap and refrigerate for at least 30 minutes while you prep your apples. This keeps the butter from melting into the dough before it hits the oven.
  6. Slice: Preheat oven to 425°F with a rack positioned in the center. Cut the chilled block crosswise into slices about ¾-inch thick.
  7. Arrange and top: Place slices on a parchment-lined baking sheet, leaving at least 1 inch between each (they'll spread). Lay three apple slices across the top of each palmier, press them gently so they adhere to the cheese layer underneath. Sprinkle with remaining cheddar, black pepper, and a light dusting of flaky salt.
  8. Bake: Bake for 18-20 minutes until puffed and golden brown around the edges. The top should be deep amber—don't pull them out too early or they'll deflate.
  9. Cool slightly: Let rest on the baking sheet for 5 minutes before serving. They'll continue to set as they cool.
