I ruined my first attempt by using too many sweet apples. They turned to mush before the crumble topping could brown properly.
Now I stick with Granny Smith or Pink Lady—fruity but firm enough to hold their shape through baking. The tartness cuts through the buttery topping in a way that makes people ask for seconds without realizing they've already had three bites.
I make this when I have apples on hand and need something that feels special without demanding much attention. A single bowl does most of the work, and you can assemble it while dinner cooks if timing works out.

Ingredients
  

For the filling:
  • 6 large apples about 2½ lbs, peeled and sliced into ¼-inch wedges
  • 3 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
For the crumble topping:
  • 1 cup all-purpose flour
  • ¾ cup rolled oats not instant
  • ½ cup brown sugar packed
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter cold and cubed
  • 2 tablespoons heavy cream

Method
 

  1. Preheat oven to 375°F. Lightly grease a 9-inch square baking dish with butter or cooking spray.
  2. Toss the sliced apples with lemon juice in a large bowl so they don't brown while you work. Add sugar, cinnamon, nutmeg, and cornstarch; stir until the apples are evenly coated. Spread into your prepared dish.
  3. In another bowl, whisk together flour, rolled oats, brown sugar, and salt. Cut the cold butter into small cubes and add to the mixture. Use your fingers or a pastry cutter to work the butter into the dry ingredients until you have a coarse texture with some pea-sized bits remaining—this is what gives the topping its crumbly character.
  4. Drizzle heavy cream over the flour mixture and stir gently until it comes together in clumps. Don't overmix; you want irregular pieces, not a uniform dough.
  5. Scatter the topping evenly over the apples. For extra crunch, press down lightly with your hands to create some larger clusters, then let them break apart as they bake.
  6. Bake for 40-45 minutes until the top is golden brown and you can see bubbles forming at the edges where the apple juices are escaping. If it browns too quickly after 30 minutes, tent loosely with foil.
  7. Let rest for 15 minutes before serving—the filling will be very hot initially and needs time to set so it doesn't run everywhere when you scoop.

Notes

  • Apple choice matters: Granny Smiths are my go-to for their tartness and firmness, but you can use a mix with Honeycrisp or Braeburn for more sweetness.
  • Cold butter = better topping: Don't let the butter get warm while prepping. Keep it in the fridge until the last moment.
  • Storage: Keeps at room temperature for 2 days or refrigerated for up to 5. Reheat in a 350°F oven for 15 minutes to restore crispness.
