The first time I made this recipe on a rainy afternoon, my kitchen smelled like cumin and seared beef. I'd been making burritos for years but kept running into one problem: the filling was either too soupy or too dry depending on how fast I cooked it. What finally solved it was letting the beans simmer with the meat long enough to absorb flavor without releasing all their liquid.
I make this at least once a month now because it works whether I'm cooking for two or feeding a crowd, and everything holds together well when wrapped tightly. The secret I've found is keeping the salsa on the drier side—too much moisture turns burritos into soggier versions of themselves within an hour.

Ingredients
  

For the filling:
  • 1 tbsp olive oil
  • 1 lb ground beef 80/20 works great
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper optional but adds nice warmth
  • 15 oz can black beans drained and rinsed
  • 1 cup salsa I prefer a medium-dry style like Prego or Pace
  • Salt and freshly ground black pepper to taste
For assembly:
  • 8 large flour tortillas about 10 inches wide
  • Shredded cheddar cheese for topping, optional
  • Sour cream for serving
  • Fresh cilantro chopped (for garnish)

Method
 

  1. Prep the filling. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking. Add the diced onion and cook for 3–4 minutes until translucent and just starting to turn golden at the edges.
  2. Brown the beef. Add ground beef to the skillet, breaking it apart with a wooden spoon as it cooks. Cook for about 6–8 minutes until the meat is fully browned and no longer pink in the center (160°F internal temperature). Drain any excess fat if there's more than you'd like.
  3. Add aromatics. Stir in the minced garlic, cumin, chili powder, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant, being careful not to burn the garlic—it should smell warm and earthy.
  4. Simmer with beans. Fold in the drained black beans and salsa. Lower heat to medium-low and let everything simmer together for about 5 minutes. The filling should be thick enough that it doesn't pool liquid when you lift a spoonful—this is where the "dryness" secret comes in, letting excess moisture cook off.
  5. Warm tortillas. Lay tortillas flat on your counter or microwave them for 20 seconds wrapped in a damp paper towel. Warmed tortillas are much more pliable and less likely to crack when you wrap them tightly around the filling.
  6. Assemble burritos. Spoon about ¾ cup of filling down the center of each tortilla, leaving about 1 inch of space on either side. Add a handful of shredded cheese if using, then fold in the sides first (like wrapping a present), roll from the bottom up tightly, and place seam-side down.
  7. Serve. Plate burritos with a dollop of sour cream and fresh cilantro on top. They're best eaten warm but hold together nicely for leftovers too.

Notes

Make ahead: The filling keeps well in the refrigerator for up to 4 days or freezes beautifully for about 3 months. Just thaw overnight and reheat gently before assembling—this actually helps thicken it further since condensation will have evaporated during freezing.
Substitutions: Ground turkey works just as well if you prefer leaner meat. You can also swap black beans for pinto beans, or add a handful of shredded rotisserie chicken to the filling for extra protein. For vegetarian versions, replace the beef with 1 cup of cooked lentils and use vegetable broth instead of water when simmering.
Storage: Leftover burritos (unwrapped) last in the fridge for up to 3 days. To reheat without drying them out, wrap each one tightly in foil and warm at 350°F for about 15 minutes until heated through.
Serving suggestions: These pair beautifully with a simple side salad or roasted corn on the cob. I also like adding hot sauce directly into the filling while it's still warm—it infuses more flavor than drizzling it on top afterward.
