I still remember the first time I burned a shallot because I was distracted by the radio. The bitter taste ruined an otherwise perfect grain dish, so now I treat shallots with the respect they deserve: low heat and patience. This bulgur pilaf has earned its place in my rotation not because it’s fancy, but because it’s forgiving and deeply savory when done right.

Ingredients
  

Grains
  • 1 cup medium-grain bulgur wheat
Aromatics & Seasoning
  • 4 shallots finely diced
  • ½ tsp kosher salt plus more for water
  • ¼ tsp black pepper
Liquids & Fats
  • 2 tbsp unsalted butter divided
  • 1 ¾ cups vegetable or chicken broth
Garnish
  • 1 tbsp fresh parsley chopped

Method
 

  1. Rinse the bulgur wheat in a fine-mesh sieve under cold running water until the water runs clear. This removes excess starch and prevents mushiness. Drain well and set aside.
  2. In a medium saucepan with a tight-fitting lid, melt 1 tablespoon of butter over medium-low heat. Add the diced shallots and a pinch of salt. Cook gently for about 8–10 minutes, stirring occasionally, until the shallots are soft and translucent but not browned. They should be sweet and fragrant.
  3. Add the drained bulgur to the pan with the shallots. Stir constantly for 2 minutes to toast the grains lightly. You will smell a nutty aroma. Be careful not to burn them.
  4. Pour in the broth, add the remaining salt and pepper, and bring to a boil over high heat. Once boiling, immediately reduce the heat to low, cover tightly with the lid, and simmer for 15 minutes. Do not lift the lid during this time.
  5. Remove the pan from the heat and let it stand, still covered, for another 5 minutes. This allows the bulgur to finish absorbing moisture evenly.
  6. Uncover and fluff the grains gently with a fork. Stir in the remaining 1 tablespoon of butter and the chopped parsley until melted and combined. Serve warm.

Notes

The key is toasting the grains until they smell nutty before adding liquid; this step builds a flavor foundation that boiling alone can’t achieve. I always stir in a knob of butter at the end for richness, which balances the earthy bulgur perfectly. It’s simple enough to throw together while prepping other components, yet it tastes like you spent time on it.
