Braised Beef Brisket

I've been making this brisket for years now because it has the rare combination of being deeply flavorful yet forgiving enough to throw together when you forget to take meat out of the freezer. The first time I tried braising it, I left it on too long and ended up with something that tasted incredible but looked like a pile of shreds — which was fine for tacos or sandwiches, but not what I wanted for Sunday dinner.

Ingredients

Beef
  • 3-4 lb beef brisket trimmed of excess fat
Oil
  • 2 tbsp vegetable oil or olive oil
Aromatics
  • 1 large yellow onion coarsely chopped
  • 6 cloves garlic minced
Liquids
  • 1 cup dry red wine Cabernet Sauvignon or Pinot Noir work well
  • 1 cup beef broth low sodium preferred
Seasonings & Herbs
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • 2 bay leaves
  • 3 sprigs fresh rosemary
  • Kosher salt and freshly ground black pepper

Method

  1. Season the brisket generously with salt and pepper on all sides, then heat oil in a large Dutch oven over medium-high heat until shimmering but not smoking.
  2. Sear the brisket for 4-5 minutes per side until deeply browned — this is crucial for flavor development. Don't crowd the pan; if your pot is small, sear one side at a time and remove to a plate between batches.
  3. Reduce heat to medium, add onions to the same pot with any fond (brown bits) still clinging to the bottom. Cook 5-6 minutes until softened and lightly browned. Add garlic and cook another minute until fragrant.
  4. Stir in tomato paste, thyme, rosemary, and bay leaves. Pour in wine, scraping up all those brown bits from the bottom of the pot with a wooden spoon. Bring to a gentle simmer for 2 minutes.
  5. Return brisket to the pot, fat-side up. Add beef broth — it should come about halfway up the sides of the meat, not fully submerged. If you need more liquid, add some water or additional broth.
  6. Cover with lid and transfer to a 325°F oven. Cook for 2-2½ hours until the internal temperature reaches at least 190°F (for fork-tender results). Check occasionally — if it's drying out on top, baste once halfway through.
  7. Remove from oven and let rest in the pot for 15 minutes before slicing against the grain. Serve with the braising liquid spooned over the top or reduced separately into a sauce.

Notes

The secret is really just in the sear: you want that deep brown crust before the liquid goes in. It sounds basic, but so many recipes rush this step and lose all the flavor-building potential. Once it's cooking away, there's nothing to do except walk away and let time work. When you pull it out of the oven, the meat should yield easily when pressed with a fork — not fall apart completely, but give way without resistance.
