I first stopped making these because I was tired of the endless stir-and-stir at the stove. That changed when I found out you could toss russets in oil and spices on a sheet pan and walk away while they turned into something with crispy edges and creamy centers.
What keeps them earning their place is how forgiving they are to cook. You can use any potato, even ones that look slightly sad from the produce bin. Roasting at 425°F gives you enough heat for browning without burning, and flipping halfway through prevents the dreaded soggy-bottom problem.
One thing I learned after making these too many times: don't crowd the pan. Give each potato room to breathe, or they'll steam instead of roast. That single adjustment transformed what could be an average side into something worth writing home about.

Potatoes
  • 3 lbs russet potatoes about 6 medium, cut into 1-inch chunks

Method
 

  1. Preheat your oven to 425°F with a rack in the center position. Line two large sheet pans with parchment paper or aluminum foil for easier cleanup.
  2. Cut potatoes into uniform 1-inch chunks — this ensures they cook evenly. If some pieces are larger than others, you'll end up with mushy bits alongside still-crunchy ones.
  3. In a very large bowl (or directly on the prepared sheet pans), toss potato chunks with olive oil until every piece is lightly coated. This step matters more than most people realize — dry spots mean uneven browning.
  4. Sprinkle salt, pepper, paprika, garlic powder, onion powder, and cayenne evenly over the potatoes. Use your hands to distribute spices thoroughly; a quick shake of the bowl works too if you're feeling lazy.
  5. Spread potatoes in a single layer on the prepared sheet pans. If crowding is inevitable, use both pans — do not sacrifice space for convenience. Potatoes touching each other will steam rather than roast.
  6. Roast for 20 minutes, then remove from oven and flip each potato piece using a spatula or tongs. This second flip is the difference between good potatoes and great ones.
  7. Return to oven and roast another 15-20 minutes until edges are deeply golden brown and centers register 205°F on an instant-read thermometer (or pierce easily with a fork).
  8. Remove from oven, sprinkle fresh rosemary over the hot potatoes, and let rest for 2 minutes before serving. The residual heat will release the rosemary's oils beautifully.

Notes

Potato choices: Russets give the classic fluffy interior with crispy exterior, but Yukon Golds work beautifully too — they're creamier and slightly sweeter. Red potatoes hold their shape better if you prefer firmer bites.
Make-ahead: You can cut and oil the potatoes up to 4 hours ahead; store covered in the refrigerator. Bring them back to room temperature before roasting for best results.
Storage leftovers: These keep well in an airtight container in the fridge for 3 days. Reheat in a hot oven (400°F) for 10 minutes rather than microwaving — you want those crispy edges preserved.
Spice adjustments: For extra heat, add ¼ tsp more cayenne or a pinch of red pepper flakes. For milder versions, cut the cayenne to just a dash and increase smoked paprika by half a teaspoon.
