What keeps pulling me back is how simple it is and how good it tastes for being so straightforward. You only need a handful of ingredients — peaches, whiskey, some pantry staples — but you get layers of flavor from just simmering them together into a glaze that clings to the chicken perfectly. I keep it in my regular rotation because it feels special enough for company yet easy enough to make when nobody's around.
One thing that really makes a difference: don't skip scoring the skin before cooking. It helps the flavors penetrate deeper and gives you better browning overall — something I learned after burning through too many batches of chicken with uneven flavor distribution in my early attempts.

Ingredients
  

For the Chicken:
  • 4 bone-in skin-on chicken thighs (about 2 pounds)
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper to taste
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
For the Peach-Whiskey Glaze:
  • 3 ripe peaches pitted and diced (about 2 cups)
  • ½ cup whiskey bourbon or rye work well
  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar

  • 2 cloves garlic minced

Method
 

  1. Season the chicken thighs generously with salt and pepper on both sides. Sprinkle with smoked paprika and garlic powder, then pat dry if any moisture has accumulated.
  2. Score the skin side of each thigh in a crosshatch pattern — about half an inch deep — being careful not to cut through into the meat. This helps render fat evenly during cooking.
  3. In a medium saucepan over medium heat, add olive oil and diced peaches. Cook for 5-7 minutes until peaches begin breaking down and releasing their juices.
  4. Add whiskey, apple cider vinegar, brown sugar, Dijon mustard, minced garlic, and soy sauce to the pan. Stir well to combine everything thoroughly. Bring the mixture to a gentle simmer and cook uncovered for about 10 minutes until it reduces slightly and thickens into a glaze consistency.
  5. Preheat your oven to 425°F (220°C). If using a grill, heat one side to medium-high indirect heat.
  6. Place chicken thighs skin-side down in a large skillet or directly on the grill grate. Cook for 18-20 minutes without moving them until the skin becomes golden and crispy.
  7. Flip the chicken and brush generously with the peach-whiskey glaze. Continue cooking for another 15-18 minutes, brushing once more halfway through, until internal temperature reaches 165°F (74°C) at the thickest part of each thigh.
  8. Remove from heat and let rest for 5 minutes before serving. Spoon any remaining glaze over the top as you plate up.

Notes

Choosing your peaches: Look for firm but ripe ones that give slightly to gentle pressure — not mushy soft, not rock hard. Yellow peaches tend to have more intense flavor than white peaches in this recipe since they hold up better during cooking without turning too watery.
Whiskey options: Bourbon gives a sweeter profile while rye brings more spice and bite. Either works beautifully; I've made it with both and honestly couldn't tell much difference once everything is cooked down together. Avoid anything you wouldn't drink straight — the flavor comes through clearly in the final dish.
Storage: This keeps well for 3-4 days in the refrigerator. Reheat gently in a covered skillet over medium-low heat to avoid drying out the chicken, or microwave individual portions with a splash of water added on top.
Serving suggestions: Pairs wonderfully with roasted potatoes, rice pilaf, or simple green salads. I've also served it alongside grilled corn and found that combination particularly satisfying when people want something substantial yet light enough for summer evenings.
