Ingredients
  

For the Sauce
  • 1 tbsp black bean paste douchi
  • 1 tbsp chili crisp or doubanjiang spicy broad bean paste, plus more for serving
  • 1 tsp rice vinegar
  • 1/2 tsp sugar
  • 2 tbsp water
For the Stir-Fry
  • 1 large head bok choy about 1 lb, halved lengthwise if small or quartered if large
  • 1 tbsp neutral oil such as canola or avocado
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
For Serving
  • Steamed jasmine rice for serving
  • Sesame seeds and sliced scallions optional garnish

Method
 

  1. Prepare the Sauce: In a small bowl, whisk together the black bean paste, chili crisp or doubanjiang, rice vinegar, sugar, and water until smooth. Set aside. This ensures you don't burn the aromatics while measuring ingredients later.
  2. Blanch the Bok Choy: Bring a pot of salted water to a boil. Add the bok choy and cook for exactly 1 minute until bright green but still crisp. Drain immediately and rinse under cold water to stop the cooking process. Pat dry with paper towels. This step removes any bitterness and ensures even cooking in the stir-fry.
  3. Sauté Aromatics: Heat a wok or large skillet over medium-high heat. Add the oil and swirl to coat. Once the oil shimmers, add the minced garlic and grated ginger. Stir constantly for about 30 seconds until fragrant but not browned.
  4. Combine and Coat: Pour the prepared sauce into the wok. Let it bubble for 10 seconds to meld the flavors. Add the blanched bok choy back to the pan. Toss vigorously with tongs or a spatula for 1-2 minutes, ensuring every piece is coated in the glossy, spicy paste.
  5. Serve: Remove from heat immediately. Transfer to a serving platter and garnish with sesame seeds and sliced scallions if desired. Serve hot alongside steamed jasmine rice.
