I still remember the first time I blended fresh coconut with a handful of cilantro and a splash of lime. The aroma was bright enough to cut through any heavy curry on my plate, and the texture was impossibly smooth without being watery. It quickly replaced store-bought jars in my fridge because it actually tastes like something alive.

Ingredients
  

Coconut
  • 1 cup fresh unsweetened shredded coconut or thawed frozen coconut
Herbs & Aromatics
  • 3-4 sprigs fresh cilantro leaves and tender stems
  • 1/2 inch piece fresh ginger peeled and roughly chopped
  • 2 green chilies seeded if you prefer less heat (leave seeds for more spice)
  • 3-4 cloves garlic cloves
Nuts & Spices
  • 1 tbsp roasted peanuts or cashews optional, for creaminess
  • 1 tsp cumin seeds
Seasoning & Acid
  • 1/2 tsp salt plus more to taste
  • 1 tbsp fresh lime juice

Method
 

  1. Toast the coconut: Heat a dry skillet over medium-low heat. Add the shredded coconut and toast for 2–3 minutes, stirring frequently, until it turns slightly golden and smells nutty. Be careful not to burn it. Transfer to a plate to cool completely; this step deepens the flavor significantly.
  2. Temper the spices: In the same skillet, add the cumin seeds. Cook for 30 seconds until fragrant. Add the garlic cloves and cook for another 15–20 seconds until lightly golden. Remove from heat and let cool slightly.
  3. Blend: Place the cooled toasted coconut, cilantro, ginger, green chilies, nuts (if using), tempered cumin/garlic mixture, salt, and lime juice into a blender or food processor.
  4. Process to smoothness: Pulse several times, then blend on high. Stop to scrape down the sides as needed. Add water one tablespoon at a time only if necessary to get it moving, but aim for a thick, paste-like consistency rather than a runny sauce. Taste and adjust salt or lime juice as desired.
  5. Store: Transfer to an airtight container. The chutney will keep in the refrigerator for up to 4 days.

Notes

This chutney is my go-to side for anything spicy or rich. I make a big batch on Sunday so it’s ready to scoop onto rice, stir into lentils, or just eat with a spoon straight from the jar. The secret is squeezing every drop of liquid out of the grated coconut; that extra richness makes all the difference in the final flavor profile.
