I discovered this chutney on a Tuesday when the oven was already full of pies and I needed something bright to cut through the richness. It comes together in fifteen minutes with ingredients you likely have hiding in your pantry, proving that complex flavor doesn’t require hours of simmering.

Ingredients

  • 1 cup apple cider
  • 1/2 cup brown sugar packed
Thickener
  • 1 tbsp cornstarch
  • 2 tbsp cold water
Flavorings & Add-ins
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans toasted

Method
 

  1. In a medium saucepan over medium-high heat, combine the apple cider and brown sugar. Stir constantly until the sugar has completely dissolved and the mixture begins to bubble.
  2. Reduce heat to low and let it simmer for about 5 minutes, stirring occasionally, until the liquid reduces slightly and becomes syrupy.
  3. In a small bowl, whisk the cornstarch with cold water until smooth. Slowly pour the slurry into the saucepan while stirring vigorously to prevent clumping.
  4. Continue to cook for another 2-3 minutes, stirring constantly, until the chutney thickens enough to coat the back of a spoon. It should have a glossy appearance.
  5. Remove the pan from the heat immediately. Stir in the lemon juice, cinnamon, cloves, cranberries, and pecans. The residual heat will warm the fruit and nuts without making them mushy.
  6. Let cool for 10 minutes before serving; it will continue to thicken as it cools. Transfer to a jar if not using immediately.
