Watercress and pea soup

No ratings yet
I used to think watercress was too peppery for soup until I roasted a bunch in my oven with olive oil and it softened into something almost nutty. That single experiment changed how I approach the stuff—I started treating it more like spinach than arugula, letting heat mellow its bite.
This soup has been living in my rotation for two years now because it comes together without much fuss but tastes like you actually put effort into it. The key is toasting the garlic and onions before adding everything else—those aromatics get this golden sweetness that balances the peppery greens perfectly. I usually serve it with a drizzle of good olive oil and some crusty bread, nothing fancy.

Ingredients

Aromatics
  • 3 tablespoons unsalted butter
  • 2 medium yellow onion finely diced (about 2 cups)
  • 4 cloves garlic minced
Greens and Peas
  • 1 pound fresh watercress tough stems removed
  • 2 cups frozen peas
Liquid and Seasoning
  • 4 cups vegetable broth or chicken broth
  • Salt and freshly ground black pepper to taste
  • ½ cup heavy cream or half-and-half
  • 1 tablespoon lemon juice

Method

  1. Melt the butter in a large Dutch oven or soup pot over medium heat. Add the diced onion and cook for about 5 minutes, stirring occasionally, until softened and translucent but not browned.
  2. Stir in the minced garlic and cook for another minute until fragrant. The kitchen should smell like warm onions—this is when you know it's ready to move forward.
  3. Pour in the vegetable broth and bring to a simmer. Add the watercress and peas, stirring gently to submerge everything. Cook for 8-10 minutes until the greens have wilted completely and the peas are tender.
  4. Working in batches, carefully transfer the soup to a blender or use an immersion blender directly in the pot. Blend until smooth—be careful of hot steam when opening a regular blender lid. Return the blended soup to the pot if using batches.
  5. Stir in the heavy cream and lemon juice. Season with salt and pepper to taste—the soup should have a bright, fresh flavor that isn't overpowered by any single ingredient. Taste and adjust as needed before serving.
