Pea Pancakes

I first made these peas because the freezer had a sad bag of frozen ones I'd been ignoring. They turned out crisp around the edges with tender centers, and once I added the lemon zest, they became something more than just a side dish — they're now one of those things I reach for when I need dinner on the table without much fuss.
What makes them work is keeping the heat steady so the peas get some color instead of steaming in their own juices. A quick toss with butter and Parm at the end adds richness, but don't skip the lemon; it wakes everything up. They go with just about anything roasted or grilled — chicken, fish, pork chops — which means I make them whether or not I plan ahead.

Ingredients

Olive Oil
  • 2 tablespoons olive oil or unsalted butter
Peas
  • 10 ounces frozen peas thawed and drained well
Garlic
  • 3 cloves garlic minced
Lemon Zest
  • 1 tablespoon lemon zest from about 1 lemon
Parmesan Cheese
  • 1/4 cup grated Parmesan cheese
Butter
  • 2 tablespoons unsalted butter
Seasoning
  • Salt and freshly ground black pepper to taste
  • Pinch of red pepper flakes optional

Method

  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers. Add the thawed peas in an even layer — don't crowd them, work in batches if needed. Cook undisturbed for 3 minutes to develop color, then stir and continue cooking 4 more minutes until lightly browned in spots.
  2. Push the peas to one side of the skillet. Add the garlic to the empty spot and cook 30 seconds until fragrant, then mix everything together.
  3. Reduce heat to medium-low and stir in the lemon zest, Parmesan, and butter. Cook 1 minute more until the cheese melts and everything is coated.
  4. Season generously with salt and pepper. If using red pepper flakes, add them now. Serve immediately while hot.

Notes

Prep tips: Thaw the peas in a colander and pat dry with paper towels before cooking — excess moisture is what makes them steam instead of brown. If you're using fresh peas, double the amount (about 20 ounces).
Substitutions: You can use all butter instead of olive oil for richer flavor. Frozen edamame works well in a pinch. Swap Parmesan for Pecorino if you prefer something sharper.
Storage: Leftovers keep in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat with a splash of water, or microwave in 30-second intervals until warm. The texture softens slightly but remains pleasant.
