Orange cake with a caramel and orange sauce

I learned the hard way that this cake needs time to rest. The first batch I pulled from the oven was still gummy in the center — I'd been so eager to drizzle on the caramel-orange sauce, I forgot to wait for it to cool. Now I always let mine sit in the pan for 20 minutes before turning it out.

Ingredients

For the cake:
  • 2 cups 250g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup 67g unsweetened cocoa powder
  • 1 1/2 cups 300g granulated sugar
  • 2 large eggs room temperature
  • 1 cup 240ml milk
  • 1/3 cup 80ml vegetable oil
  • 2 teaspoons vanilla extract
  • 1 Zest of 1 orange
For the caramel-orange sauce:
  • 1 cup 200g granulated sugar
  • 6 tablespoons 85g unsalted butter, cubed
  • 1/2 cup 120ml heavy cream, warmed
  • 3 tablespoons fresh orange juice
  • 1 Zest of 1 orange

Method

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder until no lumps remain — this prevents pockets of bitter cocoa in your finished cake.
  3. Add sugar to the dry ingredients and stir well. Make three wells in the mixture and crack eggs into them. Pour milk over one well, oil over another, and vanilla with orange zest over the third. Let everything sit for 2 minutes so the flour can absorb some of the liquid before mixing.
  4. Stir gently from the center outwards until just combined — overmixing will make your cake tough. The batter should be thick but pourable.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean with just a few moist crumbs clinging to it. Don't open the oven door before 28 minutes — you'll want that full rise.
  6. While the cake bakes, make the sauce: Heat sugar in a medium saucepan over medium heat without stirring. Once you see small bubbles forming around the edges (about 5 minutes), gently swirl the pan to distribute heat evenly. Continue cooking until the sugar turns amber-colored — this takes about 8 more minutes. Watch carefully; once it passes that golden stage, it can go from beautiful to burnt quickly.
  7. Carefully add butter to the caramelized sugar (it will bubble vigorously). Once melted, slowly pour in warm cream while whisking constantly. The mixture will thicken slightly as it cools a bit.
  8. Remove saucepan from heat and stir in orange juice and zest. If your cake is still hot from the oven, drizzle the sauce directly over it and let sit for 10 minutes so everything melds together. For cooler cakes, warm the sauce gently before serving.

Notes

I make this when I want something that feels special without demanding anything from me. It's a single bowl cake with a simple syrup that becomes its own sauce once you stir in orange juice and zest. I serve it warm, sometimes with just a dollop of whipped cream on the side. The caramel and orange flavors play together nicely — sweet but not cloying, bright enough to keep things interesting.
I've made this cake at least a dozen times now, and each time I've refined one small thing: adding an extra half cup of milk for tenderness, letting the sauce reduce just until it coats a spoon. That's about all that changes with practice — confidence in your hands and knowing when to pull something off the heat.
