- Make the Za'atar: Start by making your spice blend. In a small dry skillet over medium-low heat, toast the sesame seeds until they turn golden brown and smell nutty, about 3 to 4 minutes. Watch them closely so they don't burn! Immediately transfer the toasted seeds to a bowl with the dried oregano (or thyme), sumac, and sea salt. Whisk everything together well. If you prefer a coarser texture, pulse it briefly in a spice grinder, but I love the little bit of crunch from the whole seeds.
- Prep the Sauce: While the spices cool, make your yogurt sauce. In a small bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and red pepper flakes until smooth and creamy. Taste it and add a pinch of salt if needed. Cover and set aside in the fridge.
- Prepare the Lamb: Pat your lamb chops dry with paper towels; this is crucial for getting a nice sear. Rub both sides generously with olive oil, then press about 1 teaspoon of your homemade za'atar onto each chop. Let them sit at room temperature for 20 minutes while your grill or pan gets hot.
- Grill the Lamb: Heat a grill or cast-iron skillet over high heat until very hot. Grill the lamb chops, turning once, until they are nicely charred on the outside and have reached your desired doneness. For medium-rare, remove them when the internal temperature reaches 125°F (52°C); for medium, aim for 135°F (57°C). The temperature will rise a few degrees as they rest.
- Rest and Serve: Transfer the chops to a warm plate and let them rest for 5 minutes. This allows the juices to redistribute so every bite is tender. Slice against the grain and serve immediately with a big dollop of the sumac garlic yogurt on the side or spooned over the top.

Substitutions: If lamb feels too heavy for a weeknight, this za'atar blend works beautifully on chicken thighs or even roasted sweet potatoes. Just keep in mind that poultry needs to reach 165°F internally.
