- Heat olive oil in a large Dutch oven over medium heat until shimmering. Add the diced onions and cook undisturbed for about 5 minutes until they begin to soften at the edges.
- Stir in the minced garlic, thyme, and red pepper flakes. Cook another minute until fragrant, then add the carrots, parsnips, and celery. Continue cooking for 6-8 minutes, stirring occasionally, until the onions are deeply golden and any liquid has evaporated from the pot.
- Pour in the vegetable broth, scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the drained tomatoes, mushrooms, and potatoes. Bring to a rolling boil over high heat.
- Once boiling, reduce the heat to medium-low and let simmer uncovered for 25-30 minutes until the vegetables are tender when pierced with a fork. The soup should thicken slightly as it cooks.
- Taste and season generously with salt and pepper—the broth needs more seasoning than you might expect since you're using so much liquid. Add butter one tablespoon at a time, swirling to melt between additions for richness.
- Ladle into bowls and top with fresh parsley and Parmesan if desired. Serve immediately while hot.
