Vanilla-Orange Sugared Cranberries — Fresh homemade recipe photo

Vanilla-Orange Sugared Cranberries

No ratings yet
When I first tried sugaring cranberries for a dessert platter years ago, I overdid the vanilla—left them tasting like vanilla extract had been poured directly into my pantry. After a few adjustments, they settled into something bright and surprisingly sophisticated without any of that cloying sweetness you get from plain sugar crystals.
I keep these in my refrigerator year-round because honestly, there's almost nothing I wouldn't serve them alongside. They look stunning on cheese boards, tuck beautifully between sandwich layers, and even break open a piece of buttery pound cake when you're short on dessert ideas. The orange zest really does the work here—it lifts everything so the cranberries don't taste like they've been sitting in sugar all day.
The trick that actually changed this recipe for me: tossing them with a bit of cornstarch before coating. It keeps the sugar from clumping and makes sure every berry gets an even dusting without turning into sticky jewels.

Ingredients

Cranberries
  • 12 oz fresh cranberries stems removed
Sugar Mixture
  • 3/4 cup granulated sugar
  • 2 tsp orange zest from 1 orange
  • 1/4 cup granulated sugar for sprinkling
Finishing Touches
  • 1 tsp pure vanilla extract
  • 1 pinch fine salt

Method

  1. In a medium bowl, whisk together ¾ cup sugar, the orange zest, and salt until well combined. The zest should be evenly distributed—no clumps of pure orange peel.
  2. Add the cranberries to the sugar mixture and toss gently with a rubber spatula until every berry is thoroughly coated. The berries should look like little red jewels now.
  3. Transfer to a parchment-lined baking sheet in a single layer, spacing them about an inch apart so they don't stick together as they dry.
  4. Sprinkle the remaining ¼ cup sugar evenly over the cranberries for extra crunch. Set aside at room temperature for 24 hours—no need to refrigerate yet.
  5. After 24 hours, give them a good shake on the parchment and drizzle with vanilla extract. Toss one final time until the liquid is absorbed and the berries have that beautiful sugared crust.
  6. Store in an airtight container at room temperature for up to 1 week (or refrigerate for longer storage).

Tips & Substitutions

  • Different fruit: Works beautifully with blueberries, blackberries, or even green grapes for a different color palette.
  • Variations: Swap half the sugar for brown sugar for deeper flavor. Add ½ teaspoon of cardamom powder to the zest mixture for an interesting twist.
  • Serving suggestions: Chop and sprinkle over yogurt, fold into whipped cream, or serve alongside sharp cheeses like aged cheddar or goat cheese.
