Toasted crumpets and warm spiced berries with yoghurt and honey

I stopped buying frozen crumpets about three years ago after burning my third batch on a Tuesday morning. The key is starting with dry ones — the kind that barely have any moisture left — so they toast up crisp without getting soggy under the fruit. I keep a pack of them in the pantry and make this at least once every couple weeks when I'm tired enough to want something better than cereal but not ambitious enough for eggs.
The berries cook down quickly, which is why I usually heat the oven while I work on the topping. I've learned that warming the yoghurt bowl first makes a real difference — cold dairy kills the warmth of everything else. A little orange zest in the berries brightens what could otherwise be a one-note dish.
I serve this with a drizzle of local honey right before eating, not after. The warm berries melt it slightly, and you get those tiny crystallized bits that add texture. It's simple enough to make on any day when you're cooking for yourself or feeding someone else who might be having a rough morning.

Crumpets
  • 4 crumpets preferably day-old
Berries & Sweeteners
  • 1 cup mixed berries I use frozen raspberries and blueberries
  • 2 tbsp maple syrup
  • 1 tsp orange zest
  • ½ tsp ground cinnamon
  • Pinch of salt
Toppings
  • ¾ cup plain Greek yoghurt
  • 2 tbsp honey plus more for drizzling

Method
 

  1. Toast the crumpets in a toaster until golden and crisp — about 3 minutes on medium-high. Set aside on a warm plate.
  2. While they toast, combine the berries, maple syrup, orange zest, cinnamon, and salt in a small saucepan over medium heat.
  3. Cook for 4-5 minutes, stirring occasionally, until the berries have softened and released their juices into a syrupy consistency. Remove from heat.
  4. Spoon half of the warm berry mixture onto each crumpet.
  5. Top with a generous dollop of Greek yoghurt — I use about 3 tablespoons per serving.
  6. Drizzle with honey and serve immediately while everything is still warm.

Notes

Substitute the berries: Any combination works — I've used strawberries with blackberries and mixed frozen peaches before. Just adjust cooking time for larger pieces.
Make it sweeter: Add a pinch of nutmeg to the berry mixture if you like deeper spice notes.
Storage: Leftover berry mixture keeps in the fridge for up to 3 days and reheats well. I often make extra berries on weekends to save time during busy mornings.
Crumpet choice matters: Day-old crumpets toast better than fresh ones because they've lost some moisture. If yours are still soft, let them air-dry on the counter for an hour before toasting.
