For the Sweet Potato Base
  • 2 cup mashed sweet potatoes about 1 medium-large potato, cooked and drained well
  • 3 large eggs separated
  • 1/4 cup granulated sugar
  • 2 tablespoon unsalted butter melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Method
 

  1. Prep the Oven and Ramekins: Preheat your oven to 375°F (190°C). Generously butter four 6-ounce ramekins, ensuring you reach all corners and crevices. Dust lightly with granulated sugar if you want a slight caramelized crust, though plain butter works fine for easy serving.
  2. Mix the Base: In a large bowl, whisk together the mashed sweet potatoes, melted butter, vanilla extract, cinnamon, salt, and egg yolks until smooth and fully combined. The mixture should be thick but spreadable. Fold in half of the sugar reserve here.
  3. Whip the Egg Whites: Clean your beaters or switch to a clean bowl. Beat the egg whites on medium-high speed until they form soft peaks (they hold their shape when the beaters are lifted but droop slightly). Gradually add the remaining sugar and continue beating until stiff, glossy peaks form. Do not overbeat until dry and crumbly.
  4. Fold Gently: Take about one-third of the whipped egg whites and stir them vigorously into the sweet potato mixture to lighten it. Then, gently fold in the remaining whites using a spatula. Cut down through the center, scrape the sides, and turn the bowl over. Stop as soon as no large white streaks remain; over-mixing will deflate the air bubbles needed for rise.
  5. Bake: Divide the batter evenly among the prepared ramekins. Place them on a baking sheet (for easier handling) and bake for 20–25 minutes. The soufflés are done when they have risen significantly above the rim and the tops are golden brown. They may jiggle slightly in the center, which is normal.
  6. Serve Immediately: Remove from the oven and serve right away. Dust lightly with nutmeg if desired. Note that soufflés begin to deflate within minutes of leaving the oven, so have your plates ready.
