- Prepare the Lamb: In a small bowl, mix olive oil, cumin, coriander, paprika, turmeric, cayenne, garlic, ginger, salt, and pepper to form a paste. Rub this mixture thoroughly over the lamb roast, ensuring it gets into any crevices. Let it sit at room temperature for 20 minutes while you preheat your oven to 325°F (165°C).
- Roast the Lamb: Place the lamb in a roasting pan or cast-iron skillet. Roast uncovered until an instant-read thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare, approximately 45–60 minutes depending on size. Remove from oven and tent loosely with foil to rest. Crucial Step: Let it rest for at least 15 minutes before slicing.
- Make the Masala Paste: While the lamb rests, heat ghee in a small skillet over medium heat. Add mustard seeds and let them pop.
