Smoky Lemon Tahini Dressing

No ratings yet
I fell in love with this dressing after a grocery store mishap where I bought three lemons instead of one. That excess inventory forced me to experiment, resulting in a creamy, tangy sauce that finally stopped my weeknight salads from feeling like an afterthought.

Ingredients

Ingredients
  • 1/2 cup tahini well-stirred
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tbsp warm water
  • 1 tsp maple syrup or honey
  • 1 small garlic clove minced or pressed
  • 1/2 tsp smoked paprika
  • 1/4 tsp sea salt
  • Pinch black pepper

Method

  1. In a medium mixing bowl, combine the tahini and warm water. Whisk vigorously for about 30 seconds until the mixture thickens slightly and turns a pale, creamy color. This step is crucial for texture.
  2. Add the lemon juice, maple syrup, minced garlic, smoked paprika, salt, and black pepper to the bowl.
  3. Whisk continuously until the dressing is smooth and emulsified. If it becomes too thick, add another teaspoon of warm water at a time until you reach your desired consistency. It should coat the back of a spoon but still drizzle easily.
  4. Taste and adjust seasoning if needed, adding more salt for depth or lemon juice for brightness. Use immediately or store in an airtight container.

Notes

The secret is letting the tahini bloom in the warm water before adding acid; it prevents the mixture from seizing into a hard clump. I whisk it vigorously until it turns pale and airy, then drizzle it over anything from roasted broccoli to quick chicken cutlets. It keeps for two weeks, which is convenient because I find myself reaching for the jar constantly.
