Smoked Brisket Tortas — Fresh homemade recipe photo

Smoked Brisket Tortas

No ratings yet
I spent years thinking brisket was a weekend project. The truth is it just needed better timing — I started making it in the slow cooker on Sunday evening so it's ready by dinner without any day-of-week fussing.
The tortas that come from leftover brisket have become something of a household obsession at my house. The meat stays tender even after reheating, and when you pile it onto a warm bolillo with melted cheese and a quick pickle, the contrast between rich and sharp is exactly what makes this dish stick around in my regular rotation.
The trick I swear by: don't skip the quick pickle — even five minutes of red onion sitting in vinegar and salt makes an enormous difference. The acidity cuts right through the fattiness of the meat and brightens everything up without adding any extra steps to your evening.

Ingredients

For the brisket
  • 2 lbs smoked brisket sliced thinly against the grain (about ¼ inch thick)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
For the quick pickle
  • ½ red onion very thinly sliced
  • 3 tbsp white vinegar
  • 1 tsp sugar
  • 1 tsp kosher salt
For assembling
  • 4 bolillo rolls or French baguettes, split in half
  • 8 slices Oaxaca cheese or Monterey Jack
  • 4 tbsp refried beans
  • 2 tbsp mayonnaise
  • Hot sauce to taste
  • Fresh cilantro chopped
  • Sliced jalapeño
For the crema
  • ½ cup Mexican crema or sour cream
  • 1 tsp lime juice
  • Pinch of salt

Method

  1. Prep the quick pickle first. Toss the sliced red onion with vinegar, sugar, and salt in a small bowl. Set aside for at least 5 minutes while you work — this gives the onions time to soften and take on tang. They'll keep in the fridge for up to two weeks.
  2. Warm your brisket. Heat olive oil in a large skillet over medium heat. Add the sliced brisket and cook for about 3-4 minutes, turning once, until heated through but not dried out. You want it warm — not crispy or seared. If your brisket is very lean, reduce the cooking time to avoid drying it.
  3. Toast the rolls. Cut the bolillos in half lengthwise and toast them cut-side down in a dry skillet or under the broiler until golden, about 1-2 minutes per side. This step matters more than most people realize — soggy bread ruins everything.
  4. Prepare the crema. Mix Mexican crema with lime juice and salt in a small bowl until smooth. Set aside.
  5. Assemble each torta: Spread refried beans on the bottom half of each roll, then top with warm brisket, cheese, a spoonful of quick-pickled onions, and hot sauce to taste.
  6. Melt the cheese. Return assembled tortas to the skillet or place under the broiler for 1-2 minutes until the cheese is melted and bubbly. If using the broiler, watch carefully — cheese burns fast.
  7. Finish and serve. Spread crema on the top half of each roll, add chopped cilantro and sliced jalapeño if you like heat, close the torta, and cut in half to serve immediately while warm.

Notes

Storage: Leftover brisket keeps in the fridge for up to 4 days or freezes well for up to 3 months. The quick pickle lasts about two weeks refrigerated. Tortas are best assembled and eaten fresh — if you need to make ahead, warm the components separately and assemble just before serving.
Substitutions: Use any leftover smoked meat (pulled pork works beautifully), swap Oaxaca for cheddar, or use a good-quality baguette instead of bolillo.
