Sexy Cabbage (+ Cilantro-Lime Carrot and Cabbage Spring Rolls)

There is something undeniably satisfying about a dish that comes together in under an hour but feels like it took all day to perfect. This "Sexy Cabbage" recipe is my current obsession, mostly because it transforms humble heads of green and red cabbage into vibrant, savory bowls that are light enough for dinner but rich with flavor. I love making this when I need a reliable weeknight meal that doesn't require hunting down twenty different ingredients at the grocery store. The secret weapon here? A simple homemade chili crisp that you can make in five minutes while the sauce simmers; just toss a tablespoon of neutral oil, some dried red chiles, garlic, ginger, and a pinch of sugar into a hot pan until fragrant and golden. It adds this incredible depth that instantly elevates the dish from "healthy" to "holy."

I paired this with bright, tangy spring rolls made from shredded carrots, more cabbage, fresh cilantro, lime zest, and a dash of fish sauce or soy sauce for umami. These rolls are perfect for soaking up the spicy-sweet dressing left in the bowl, but they also make a fantastic appetizer or lunch on their own. Whether you serve this family-style with chopsticks and rice or grab a few rolls to sneak into your work lunch, I hope you enjoy every bite of this colorful, crave-worthy meal. Let's get cooking!

  • about 10 cups chopped green cabbage
  • 1 head red cabbage
  • about 4 cups thinly sliced red cabbage
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1- inch fresh ginger grated
  • 1/2 cup water or vegetable broth
  • 2 teaspoons sugar or honey
  • 1 teaspoon toasted sesame seeds
For the Cilantro-Lime Carrot Spring Rolls:
  • 4 medium carrots peeled and shredded fine
  • 1 head green cabbage finely shredded about 3 cups
  • 1 bunch fresh cilantro leaves picked stems saved for garnish if desired
  • 1 lime zest of
  • 1 tablespoon soy sauce or fish sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes optional
To Assemble:
  • about 8-10 Rice paper wrappers sheets
  • Cooked white rice for serving
  • Thinly sliced cucumber optional
  • Fresh jalapeño for extra crunch optional

Method

  1. Make the Chili Crisp (Optional but recommended): Heat 1/2 cup of neutral oil in a small skillet over medium heat. Add dried red chiles, minced garlic, grated ginger, and a pinch of sugar. Cook for 3-4 minutes until the garlic turns golden brown and smells incredibly fragrant. Remove from heat immediately to prevent burning. This will be added later if you want extra spice.
  2. Prepare the Carrot-Cabbage Filling: In a large mixing bowl, combine the shredded carrots, finely shredded green cabbage, lime zest, soy sauce (or fish sauce), sesame oil, and red pepper flakes. Toss well until everything is evenly coated in the tangy dressing. Taste and add a pinch

Notes

Prep Tip: Shredding your own cabbage and carrots gives you control over the thickness, but don't be shy about using a bagged shredded mix for weeknights! Just rinse it well to remove excess moisture.
Substitution: If you are avoiding gluten, swap the soy sauce in both the cabbage and spring rolls for tamari or coconut aminos. The texture of the rice paper can be tricky; if it tears easily, your water might be too hot—try using warm tap water instead.
Storage: Store any leftover spring rolls in an airtight container in the fridge for up to 3 days. They are best eaten fresh, but they reheat well in a microwave or air fryer. The cabbage salad will keep for 4-5 days, making it perfect for meal prep lunches.
Serving Suggestion: This dish is incredibly colorful and refreshing on its own, but pairing it with a simple ginger-lime soda or an Asian-style iced tea makes for a perfect summer dinner party menu.
