- Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper. Ensure the racks are centered so heat circulates evenly.
- Core the cabbage head by cutting a V-shape at the base. Gently separate the leaves, choosing the largest, outer ones for maximum surface area. Discard any torn or bruised sections.
- Lay each leaf flat on your counter and carefully cut away the thick, central rib using a sharp knife. You want only the thin, ruffled part of the leaf remaining.
- In a large bowl, whisk together the olive oil, minced garlic, salt, and pepper. Briefly submerge the cabbage leaves in the mixture, tossing gently with your hands to coat both sides evenly. Do not soak them; just a light coating is needed.
- Arrange the leaves in a single layer on the prepared baking sheets. Ensure no leaves overlap or touch, as steam will make them soggy rather than crisp. You may need two batches if you have fewer large leaves.
- Bake for 8–10 minutes. Watch closely after the 6-minute mark. The edges should turn golden brown and curl slightly. If they begin to darken too quickly, rotate the pans halfway through.
- Remove from the oven and let cool on the pan for at least 5 minutes. They will continue to crisp up as they cool. Serve immediately while still warm and fragrant.
