Salted (and Other) Caramel Apples — Fresh homemade recipe photo

Salted (and Other) Caramel Apples

No ratings yet
It took me three attempts to nail the caramel coating on these apples before I stopped pulling them out of the pan with drips running down my fingers. The secret wasn't in the recipe itself — it was in how I prepped: wipe each apple completely dry, then give them a quick dip in vinegar followed by another towel pass. Water is caramel's enemy, and any moisture will cause the sugar to weep and separate.
I've made these at least once a month for the past two years, usually around October when my local orchard starts selling Honeycrisps. The apples hold up well under the weight of the salted caramel — they don't go soggy like some varieties do. I love serving them with a glass of cider or wine, and honestly, they're just as good reheated for breakfast the next morning.
One thing I've learned: if you want that perfect glossy finish on your caramel apples, let the mixture cool to 240°F before dipping. Anything hotter and the apples steam from inside, creating bubbles under the coating.

Ingredients

For the Apples
  • 6 large Granny Smith or Honeycrisp apples about 3 inches in diameter
  • 1 tablespoon apple cider vinegar
  • 24 wooden skewers or popsicle sticks
For the Salted Caramel
  • 1 cup granulated sugar
  • 1/3 cup heavy cream warmed to room temperature
  • 6 tablespoons unsalted butter cut into cubes
  • 1 teaspoon vanilla extract
  • 1 tablespoon kosher salt use more for saltier apples
For Dipping and Finishing
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup white chocolate chips
  • 4 tablespoons coconut oil or vegetable shortening
  • Flake sea salt for finishing
  • Optional toppings: crushed pretzels chopped pecans, mini marshmallows

Method

  1. Prepare the apples: Wash each apple thoroughly and pat completely dry with paper towels. Wipe each one with a cloth soaked in apple cider vinegar, then do another final pass with a clean towel. Insert a skewer into the stem end of each apple, twisting gently until it's secure. Set aside on a parchment-lined baking sheet.
  2. Make the salted caramel: In a heavy-bottomed saucepan over medium heat, add the granulated sugar and stir constantly with a wooden spoon or silicone spatula for about 3-4 minutes until the sugar melts and turns amber colored. Don't let it burn — you're looking for a deep golden color, not dark brown.
  3. Add butter: Once the sugar is melted and golden, carefully add the butter cubes one at a time, whisking gently between each addition. The mixture will bubble vigorously. Continue cooking until all butter is incorporated and the caramel looks smooth, about 2-3 minutes more. Remove from heat.
  4. Finish the caramel: Slowly pour in the warmed cream while whisking constantly (the caramel will bubble up again). Add vanilla extract and kosher salt. Whisk until completely smooth and glossy. Let cool for 5 minutes — it should thicken slightly but still be pourable.
  5. Prepare chocolate for dipping: Melt the semi-sweet chocolate chips with coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring between each. Repeat until smooth. Do the same with white chocolate chips separately.
  6. Dip the apples: Hold each apple by its skewer and lower it into the salted caramel mixture. Turn slowly to coat evenly. Let excess drip off for a few seconds, then place on parchment paper. Immediately sprinkle with flake sea salt while still warm, or add other toppings if desired.
  7. Add chocolate drizzle: Once all apples are coated in caramel and cooled enough to handle (about 5-10 minutes), dip the bottom third of each apple into melted semi-sweet chocolate. Lift out and let excess drip off. For a decorative touch, melt white chocolate separately and pipe thin lines across the top using a zip-top bag with a tiny corner snipped off.
  8. Set completely: Allow apples to set at room temperature for 30-45 minutes, or refrigerate for 15 minutes if you're in a hurry. Serve immediately or store as noted below.

Notes

  • Apple selection matters. Granny Smith provides tartness that balances the sweet caramel, while Honeycrisp offers crunch. Avoid Red Delicious — they get mealy under the coating.
  • Keep your caramel smooth. If it starts to crystallize during cooking, add a splash of water and whisk gently over low heat until dissolved.
  • Storage: Store wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze individually wrapped apples for up to 2 months. Thaw at room temperature before serving — they won't get soggy this way.
  • Make-ahead caramel: You can prepare the salted caramel base and refrigerate for a week. Reheat gently on low heat before using.
  • For parties, make these the morning of — they're best when fresh but hold up nicely through dinner service.
