Four years ago I burned the first batch of roasted red peppers in my oven because I was distracted by a phone call. Since then, whenever I need something that tastes like effort but asks for very little from me, this hummus comes together without question.
The secret is roasting the peppers until their skins blister and loosen — I leave them in the hot oven with the door cracked to create a kind of steam chamber that makes peeling almost effortless. A drizzle of tahini brings richness while lemon keeps everything bright and lively, so even on nights when my palate feels tired from reheating leftovers, this still wakes up.
I keep it in my fridge year-round because I've stopped trying to be fancy about what goes with hummus. It's just as good scooped into warm pita or stirred into a salad, and the recipe scales without fuss if you need more than one batch on hand.

Ingredients
  

Peppers
  • 2 large red bell peppers about 12 oz, halved and seeded
Chickpeas & Tahini
  • 1 can 15 oz chickpeas, drained and rinsed
  • 3 tbsp tahini
Aromatics & Seasoning
  • 2 cloves garlic minced
  • 3 tbsp juice of 1/2 lemon about
  • 2 tbsp extra-virgin olive oil plus more for drizzling
  • 1 tsp ground cumin
Liquid & Salt
  • 1/4 cup water plus more as needed
  • Salt to taste

Method
 

  1. Roast the peppers: Preheat oven to 450°F. Place pepper halves skin-side up on a baking sheet, drizzle lightly with olive oil, and roast for 20–25 minutes until skins are blistered and blackened in spots. Transfer to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes (this loosens the skins). Peel away the charred skin and remove any remaining seeds.
  2. Prepare the chickpeas: Pat chickpeas dry with a paper towel — this helps them blend more smoothly.
  3. Blend until silky: In a food processor, combine tahini, garlic, lemon juice, olive oil, and cumin. Process for 1 minute to let flavors meld. Add chickpeas and processed peppers; pulse several times before blending continuously for 2 minutes until very smooth. Scrape down sides as needed.
  4. Adjust consistency: With the processor running, slowly add water one tablespoon at a time until hummus reaches your preferred thickness (usually about 1/4 cup). Season with salt to taste — start with 3/4 tsp and adjust after tasting.
  5. Serve or store: Transfer to a bowl, drizzle with olive oil if serving immediately. Store in an airtight container in the refrigerator for up to 5 days. Let come to room temperature before serving for best texture.
