Roasted Fish Bruschetta — Fresh homemade recipe photo

Roasted Fish Bruschetta

No ratings yet
I made this dish for the first time when I was trying to use up a whole fish from my local market — it came out so good that I've been making it at least once every other week ever since. The key is starting with something like branzino or sea bass, which has that delicate flake and doesn't overcook quickly if you pay attention.
What makes this work on any night is the speed: five minutes of roasting while I prep everything else, then a quick assembly before dinner guests arrive. I always use baguette slices toasted under the broiler just long enough to get golden edges — not so long that they crack when you pick them up.

Ingredients

Fish
  • 2 whole fish branzino or sea bass, cleaned and scaled (about 1 lb each)
Olive Oil & Seasoning
  • 3 tablespoons olive oil divided
  • Kosher salt and freshly ground black pepper
Garlic & Lemon
  • 4 cloves garlic minced
  • 1 lemon thinly sliced into rounds
Baguette & Herbs
  • 6 slices baguette about 2 inches thick
  • 1/4 cup fresh basil chopped
  • 2 tablespoons fresh parsley chopped
Capers & Vinegar
  • 2 tablespoons capers drained
  • 1 tablespoon red wine vinegar

Method

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Pat fish dry with paper towels. Score the skin of each fish with 3 shallow diagonal cuts on both sides. Season generously with salt and pepper inside the cavity and over the exterior.
  3. Rub one side of each baguette slice with olive oil, then toast under the broiler for about 2 minutes until golden. Set aside.
  4. In a small bowl, combine minced garlic, remaining olive oil, chopped basil, parsley, capers, and red wine vinegar.
  5. Place fish on prepared baking sheet, flesh side up. Arrange lemon slices over top of each fish. Roast for about 12-15 minutes until the internal temperature reaches 140°F at the thickest part — it should be just opaque and flake easily with a fork.
  6. While fish cooks, spoon herb mixture evenly onto toasted baguette slices.
  7. Carefully lift cooked fish from baking sheet (leaving behind any lemon juice that dripped off), then use a spatula to gently separate the flesh along the backbone. Remove bones and arrange fish meat over the bruschetta base.
  8. Serve immediately while still warm, garnished with extra lemon slices if desired.
