Roasted Eggplant and Pickled Beet Sandwiches — Fresh homemade recipe photo

Roasted Eggplant and Pickled Beet Sandwiches

No ratings yet
My first attempt at this sandwich was a soggy mess. I'd roasted the eggplant but piled it onto warm bread while the beets were still steaming hot from their pickle bath. The moisture from everything bled together and created an unappetizing mush. That night, I learned to toast my bread separately and let the pickling liquid drain properly — a small fix that changed everything.
I've been making this sandwich for months now because it hits on what I want most: something with real flavor but also some crunch and brightness. The eggplant gets silky when roasted, the beets bring tart sweetness through their quick pickle, and a smear of cream cheese (or ricotta if that's what you have) ties it all together without weighing anything down.
The trick is to get your pickling liquid ready while the oven does its work. I use rice vinegar with honey, salt, and a touch of garlic — nothing fancy but enough flavor to make the beets taste like they've been sitting for hours even when you only pickle them for twenty minutes.

Ingredients

For the quick-pickled beets
  • 2 medium beets about 1 pound, peeled and sliced into ¼-inch rounds
  • ½ cup rice vinegar
  • 3 tablespoons honey
  • 1 teaspoon kosher salt
  • 1 garlic clove smashed
  • Pinch black pepper
For the sandwich
  • 2 large eggplants cut lengthwise into halves or thick slices
  • 4 tablespoons olive oil divided
  • Kosher salt and freshly ground pepper
  • 4 slices sturdy bread sourdough or ciabatta work well
  • 4 ounces cream cheese softened
  • Small handful of arugula or baby spinach
  • ½ cup crumbled feta or goat cheese optional

Method

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Combine the rice vinegar, honey, salt, garlic, and pepper in a jar or bowl. Add the sliced beets and stir to coat. Set aside for at least 20 minutes (or up to several hours).
  3. Arrange eggplant on the prepared baking sheet. Drizzle with 3 tablespoons olive oil and season generously with salt and pepper. Toss gently to coat, then spread into a single layer.
  4. Roast for about 25 minutes until the eggplant is tender when pierced with a fork and lightly browned at the edges. Turn halfway through if you want even browning on both sides.
  5. While the eggplant roasts, toast your bread in a skillet or toaster until golden and crisp. Spread one side of each slice generously with cream cheese.
  6. Drain the beets well (don't skip this — pat them dry with paper towels to avoid sogginess). Scatter arugula over the cream-cheese side.
  7. Pile the roasted eggplant on top, then add a few slices of pickled beet. Sprinkle with crumbled feta or goat cheese if using. Season with an extra crack of pepper and serve immediately.

Notes

Make-ahead: Pickle the beets up to two days ahead. Store in an airtight container in the fridge — they'll keep for about a week. The eggplant is best roasted fresh, but you can reheat it gently in a low oven or skillet before assembling.
Substitutions: If you don't have rice vinegar, apple cider vinegar works just as well. Swap cream cheese for ricotta, mascarpone, or even hummus depending on what's in your fridge. Any sturdy bread will work — the key is toasting it so it doesn't go soggy under the toppings.
Storage: Leftover roasted eggplant keeps in the refrigerator for two days. Reheat gently rather than microwaving, which can make it watery.
