Rice Krispies Chicks in Nests — Fresh homemade recipe photo

Rice Krispies Chicks in Nests

No ratings yet
My kids call these "chicks in nests," which is adorable because they're really just Rice Krispies treats shaped like little birds sitting on a nest of pretzel sticks. The first time I made them, I pressed the cereal mixture too thin and ended up with flat discs instead of proper chicks—I had to let them cool longer than usual before shaping.
What makes these worth making over and over is that they're entirely hands-off once you get going: no stove work, no tempering chocolate, no waiting for anything to set in the fridge. You just melt butter and marshmallows together, fold in your cereal, shape them into chicks, then dip half of each chick into melted chocolate before setting it down on a nest I build from pretzel sticks arranged in circles.
The one tip that actually matters: use miniature marshmallows instead of the large ones. They melt faster and give you a smoother base for your chicks to sit on without little pockets of unmelted marshmallow showing through. A couple drops of yellow food coloring in with the cereal takes these from "nice treat" to "look what I made." They keep at room temperature for about five days, which is more than enough time to eat all twelve before they go stale.

Ingredients

For the Rice Krispies Chicks
  • 3 tbsp unsalted butter
  • 1 cup miniature marshmallows about a 7 oz bag
  • 6 cups crispy rice cereal like Rice Krispies or similar
  • Yellow food coloring optional
  • 2 large eggs for egg wash
For the Chocolate Nests
  • 1 cup semisweet chocolate chips or white chocolate chips if you prefer a lighter look
  • 40 –50 mini pretzel sticks divided into circles of about 6–8 per nest

Method

  1. Line two large baking sheets with parchment paper and set aside.
  2. In a medium saucepan over medium-low heat, melt the butter until foaming and fragrant, about 2 minutes. Add the miniature marshmallows and stir constantly until completely melted and smooth—about 4 to 5 minutes total. If using yellow food coloring, add it now and whisk in thoroughly; the mixture should be a pale golden color.
  3. Remove from heat and gently fold in the crispy rice cereal with a spatula or silicone spoon until every piece is evenly coated. Work quickly so the marshmallow doesn't start to set up again.
  4. Scoop out about 2 tablespoons of the warm cereal mixture for each chick and roll it into an oval shape, then press one end slightly thinner to form a beak point. Let them rest on your parchment-lined sheets while you prepare the chocolate nests—this gives them time to firm up enough to hold their shape without cracking when you dip them later.
  5. For the nests: Arrange 6 to 8 pretzel sticks in a small circle on one of the baking sheets, overlapping slightly at the edges so they form a little bowl shape. Repeat until all your chicks have a nest (you should make about six nests total).
  6. Melt the chocolate chips in the microwave in 30-second bursts, stirring between each, until smooth and pourable. Or use a double boiler if you prefer more control over heat.
  7. Dip exactly half of each chick into the melted chocolate—this gives them their "nestled" look—and place them gently back onto the pretzel sticks so they sit on top rather than sinking in. Let the chocolate set completely at room temperature, about 20 minutes.
  8. Once set, serve immediately or store in an airtight container at room temperature for up to five days.
